There are 2 types of Amaretti Cookies that I like to make – Crispy Light Amaretti Cookies like these and Soft Amaretti Biscuits that tend to be a little bit denser but still full of almond flavour. This recipe for light, crispy Amaretti Cookies is so simple and quick that you be amazed. Warning though, if your house is like ours, these cookies will disappear really quickly too!

Tips for the perfect Amaretti Cookie

For those of us who like a hit of almond flavour, these are the perfect cookie or biscuit. Don’t be tempted to add too much almond extract though – Too much will give you a super bitter taste.

For extra crunch and sweetness, try rolling the dough ball in 4 tbsp of caster sugar before rolling in the icing sugar.

Storing Amaretti Cookies

There’s no denying that these cookies will disappear quickly but just in case, can these Amaretti Cookies be frozen? Yes! Put them in a tupperware box with a tight fitting lid and separate layers with baking parchment. Leave to defrost at room temperature, preferably on a wire rack for around 1 hour.

Ingredients
 
 

  • 2 Egg Whites
  • 260 g Ground Almonds
  • 160 g Caster Sugar
  • 1 tsp Almond Extract
  • 1 tbsp Disaronno or Almond Liqueur
  • 4 tbsp Icing Sugar

Instructions
 

  • Line 2 baking trays and preheat the oven to 180C
  • Using an electric mixer, whisk the egg whites until you have stiff peaks

  • Fold in the ground almonds, caster sugar and almond extract and almond liqueur

  • Make sure all the ingredients are well combined
  • Using 2 spoons, take some mixture (inbetwen the size of a small plum and a large grape) and try to make quenelle shape

  • Roll the ball lightly in the icing sugar and place on a baking tray
  • Keep a good distance between each ball as your cookies may spread when cooking

  • Bake for approx 18 mins – Sometimes they take slightly longer (up to 23 mins) but keep an eye that they don't catch and burn
  • Take out of the oven and cool. Eat within 2-3 days.

Notes

For an extra crunchy cookie, you can also roll in caster sugar just before the icing sugar
