The eagle eyed amongst you will have noticed the new hashtag in the heading of this post. I'm very happy to declare that for the next few weeks #BakeoftheWeek will be joining forces with the #GBBO Bloggers Bake Off to host our very own special linky. Bakers around the country are invited to join in with baking along with the theme of that week's Great British Bake Off. Myself and Jenny from Mummy Mishaps will be posting each week with our bakes (Finger crossed mine all turn out - I have a hilarious rate of baking failures that never even make it to the blog!)
We will be sharing your bakes across social media - For this year also, we are sharing anyone who bakes but does not have a blog (or time to post their blog post). If you share your bake with the hashtag #GBBOBakeoftheWeek then we will include. Anyone who blogs will get a special mention in our following week's roundup. Our linky will open on the Tuesday evening as the show airs and remain open until the follow Monday.
The Bake: Biscuits
So what is this week's theme? Biscuits! The signature bake is something that reflects the baker but also has a nod to a place in the UK. For my signature bake I chose a super quick recipe that is enjoyed by the whole family. We are all fans of ginger but I have also included lemon as a nod to our nearby Liverpool. Typically Liverpool Tart is a lemon tart (who knew, I didn't!) and the flavours combine really well together. These Ginger & Lemon Oat Cookies are prepared and baked in less than 20 minutes - add in the barest of cooling time and you can be eating them within half an hour. They are soft and chewy and perfect for packed lunches which start again from next week!
Ginger & Lemon Oat Cookies

Ingredients
- 80ml Vegetable Oil
- 100g Caster Sugar
- 1 Medium Egg (Whisked)
- 1.5 tablespoons Treacle
- 100g Plain Flour
- 100g Porridge Oats (I use chunky for more texture)
- 1 teaspoon Bicarbonate of Soda
- 1.5 teaspoons Ground Ginger
- 1 Zest Lemon
Directions

Preheat the oven to 180C and line 2 baking trays with baking parchment | |

Mix the oil, sugar and egg in a large bowl. Add the lemon zest and stir through | |

Add the treacle and combine well. Stir in the ground ginger, flour, bicarb and oats until comes together as a loose dough | |

Using 2 spoons, divide out across the 2 baking trays - leave plenty of room in-between as they do spread | |

Bake for 10-11 minutes (If you have more time and want to minimise how much they spread you can chill the dough for 15 minutes) | |

Remove from the oven and allow to cool -I sprinkle with icing sugar but this is completely optional |
