White Chocolate & Coconut Oat Cookies

White Chocolate Coconut Oat Cookies

These are a sure winner with the kids. Not too coconutty as we only like a hint but plenty full of white chocolate. You can’t beat Oat Cookies for an after school or after swimming snack. I’ve been asked to make another batch tomorrow. The bonus is that they are super quite to make too. Violet likes her biscuits a little prettier but even she can cope with these bumpy cookies.

WHITE CHOCOLATE & COCONUT OAT COOKIES

INGREDIENTS

  • 115g Softened Butter
  • 150g Soft Light Brown Sugar
  • 1 Medium Egg
  • 1 teaspoon Vanilla Extract
  • 170g Plain Flour
  • 1/2 teaspoon Baking Powder
  • 1 pinch Salt
  • 150g Porridge Oats
  • 100g White Chocolate (Chopped into small cubes)
  • 50g Sweetened Desiccated Coconut

NOTE

Be careful not to leave these in the oven too long – they will easily catch & burn if forgotten about!

DIRECTIONS

1.
Preheat the oven to 180C and line 2 baking trays with baking parchment
2.
Using an electric mixer, whisk together the sugar and butter until well combined and fluffy. Continue mixing & add the egg and vanilla.
3.
Turn off the mixer and fold in the flour, baking powder, salt & porridge oats
4.
Fold in the coconut & white chocolate
5.
Using 2 teaspoons, scoop out small balls of the mixture and arrange on the baking trays. These cookies spread a little but not too much so you need to leave approx 1.5cm between each cookie
6.
Bake for 10 minutes. Leave to cool on a baking wire rack before eating
