There's no necessity to use leftover marzipan in this recipe - By all means, open a brand new packet (or make your own) and be as generous as you like! I am aware though, that at this time of year, some people are left with the ends of marzipan that they have used to make their Christmas cake. This recipe for Cherry Bakewell Cookies uses a small amount of both marzipan and cherries. I love the thriftiness of it.
Very similar in texture and cooking method to my Sunshine Cookies recipe - The joy is in the eating and how quick these cookies come together. Be warned, this is a very sticky mixture. Your hands will get messy!
Leftover marzipan Cherry Bakewell Cookies
Ingredients
- 100 g caster sugar
- 60 g Butter
- 1 Medium Egg
- 1 tsp Vanilla Extract
- ½ tsp Almond Extract
- 110 g Self Raising Flour Cake Flour works fine
- 80 g Marzipan Chopped into small cubes
- 80 g Glace Cherries Chopped into quarters
- 3 tbsp Icing Sugar In a separate small bowl
Instructions
- Preheat the oven to 180C and line 2 baking trays with baking parchment
- Using an electric mixer, whisk together the butter and sugar until well combined
- Add the egg and the vanilla & almond extract whilst continuing to whisk
- Turn the speed down to its lowest setting and add the flour, one tablespoon at a time until just combined
- Fold in the chopped marzipan and cherries
- Scoop out small balls with your hands (see warning above about being messy)
- Quickly roll each ball in the icing sugar until coated and place at regular intervals on the baking trays. The cookies will spread during cooking so leave a good space between each
- Bake for 12-14 minutes until turning golden. Remove from the oven and allow to cool on a wire rack.

I have cherries in kirsch - I think I will be making these! Didn't make a Christmas cake but for some reason I did open marzipan and have almost a full pack in the freezer. Who knows what I did with it!

What a great recipe! I have to admit that I really don't like marzipan, however cherry bakewells are one of the most amazing creations ever, so I know I Would love these.

Lovely, leave lots of space between cookies. Came out looking perfect. I only had frozen fresh cherries which I used. Was a bit sloppy but when baked they were fine

Made it after Christmas to use up marzipan. Will now have to buy more marzipan they went down so well!
I love it! We always end up buying extra marzipan as I use it in in so many recipes.
These were fantastic. I made a batch of 18 and within a few days they were all gone. I did use plant butter instead of dairy butter and also mixed everything by hand rather than use the mixer. They were easy to roll into balls and dip in the icing sugar which I did put through a sieve first to remove any lumps.
Deffo a firm favourite and will be making again.
