Chewy Cherry Bakewell Flapjacks

Cherry Bakewell Flapjacks

Following the success of my Cherry Bakewell Cookies (Thanks everyone for your fantastic feedback!) I decided to have a potter in the kitchen again. Just last night, Mr C was feeling like some flapjacks (but obviously we didn’t have any). I’m so pleased with these flapjacks with their cherry bakewell nod. I just can’t help keep putting cherries and marzipan into everything!

Easy to make – Just remember to score the portions as soon as the flapjacks come out of the oven and then WAIT until they are fully cooled before tucking in. These are a chewy flapjack – I much prefer chewy ones to crunchy flapjacks.

Cherry Bakewell Flapjacks Traybake

CHEWY CHERRY BAKEWELL FLAPJACKS

INGREDIENTS

  • 300g Butter
  • 300g Soft Brown Sugar (Either dark or light brown sugar is fine as long as it is soft)
  • 400g Porridge Oats (I used small porridge oat flakes)
  • 4 tablespoons Golden Syrup
  • 220g Glace Cherries (Chopped into quarters)
  • 200g Marzipan (Chopped into small cubes)
  • 1 teaspoon Almond Extract
  • 50g Flaked Almonds

NOTE

I got 20 individual flapjacks out of these. They were quite big portions though so if you like smaller, try cutting into 25.

DIRECTIONS

Cherry Bakewell Flapjacks
1.
Preheat the oven to 160C and line a 9″ square (or 10″ round) baking tin/cake tin – I use my silicone tray which I find works best for flapjacks with baking parchment
2.
Melt the butter and sugar in a pan for approx 5 minutes- do not allow to boil. Add the syrup and heat on a low heat for another couple of minutes 
3.
Remove the pan from the heat and leave to cool for a couple of minutes, then add the flaked almond, almond extract and oats. Stir through until combined
4.
Add the cherries and add the marzipan a few squares at a time in batches. Stir through after adding each batch of marzipan as you don’t want it to stick together in clumps.
5.
Add to the silicone tray or cake tin and press down gently until even
6.
Bake for 30-35 minutes. As soon as you get the flapjacks out of the oven (warning – they will be bubbling and very soft) score portions using a blunt kitchen knife
7.
Allow to cool fully before eating

The good news is that all 3 girls love them – plus Mr C is very pleased that he got his flapjacks as requested! The bad news is, there’s not many left!
