We’ve had our first lockdown birthday this week, No excuse for not getting a birthday cake though (even though we knew we would end up eating it all due to the lack of visitors). Middle child was 14 on Wednesday so celebrated with a super sweet Pink Rainbow Drops Birthday Drip Cake.

She’s not a huge fan of buttercream or frosting so I made the covering fairly light around the outside with piping just on the top. I definitely didn’t want to be spending hours on a fondant birthday cake so a drip frosting cake it was.
I used the same ganache recipe as for this Chocolate Drip Birthday Cake – It really is a no fail ganache recipe.
For the Rainbow Drops – You will need 3 large bags and one teenager to separate the colours. Obviously you can do this cake using all the colours of Rainbow Drops and would only need 1 large bag. (For people who aren’t familiar with Rainbow Drop, they are puffed rice covered in coloured sugar coating – Super good for your teeth!)

This cake used 2 x 7″ round cakes and a 12″ round board – Plenty big enough to serve around 20-25 people with a huge slice really.
Vanilla 2 Tier Birthday Cake
Ingredients
- 14 oz Butter Make sure it is not too hard
- 14 oz Caster Sugar
- 7 medium Eggs
- 2 tsp Vanilla Extract
- 16 oz Self Raising Flour
Instructions
- Preheat the oven to 160C and line your cake tin (timings have been given for 2 cakes cooked after each other)
- Using a mixer, beat together the sugar and butter until pale and fluffy
- Whisk the eggs and add the vanilla to them. Whilst mixing on a medium speed, add the eggs, one at a time until blended
- Slow the mixer right down and add the flour gradually. Stop as soon as all added and fold together until just combined
- Bake each cake for approx 45-48 minutes until a skewer comes out clean
- Leave to cool and stack upside down to get a flat top
Notes
I tend to use a vanilla frosting recipe but for a special flavour, you could try White Chocolate Frosting or even Orange Buttercream. I hope to share my favourite Vanilla Frosting recipe very soon.
