Now the weather has turned colder, its much more pleasant to get back in the kitchen. After 12 weeks of lockdown, we are needing inspiration for savoury meals. Lunchtimes in particular feel in need of a revamp. We recently had a glut of potatoes due to error on my ordering so made a huge batch of mashed potato. I knew exactly what I wanted to do with the leftovers spicy Piri Potato Cakes with Bacon.

We don’t do a lot of fried food in this house but these Potato Cakes are definitely worth it. Served with a chopped salad makes for a wonderful lunch. I precook the chopped bacon – the smaller the pieces of bacon the better.
How spicy are these Piri Potato Cakes?
Its personal preference how much Piri seasoning or salt you want to add. We love Piri flavour so added quite a bit. With this and the bacon, you won’t need any added salt in this recipe. I do think they benefit from the addition of some ground black pepper but again this is optional.

Things to do with Leftover Mashed Potato
Hard to know how much leftover mashed potato you will need – Its incredible where potatoes disappear to when you mash them. Obviously, if you only have a small amount of potato leftover then you will get less potato cakes. Try the recipe with only 1 egg first . You may find it binds well enough with just one.
We also often have Piri seasoned chopped potatoes when we have our Nandos inspired meals – Basically, boiled chopped potatoes with butter melted into them and piri spice added. Any leftovers are also perfect to be used in potato cakes the next day.
Can I freeze potato cakes?
Yes you can, although I always think they are best eaten on the day. If you do decide to freeze, defrost throughly and make sure you heat through properly in the oven for around 20-25 minutes on 200C.
You can freeze mashed potato though and make the potato cakes on the day you will need them for the best result.

Piri Bacon potato Cakes
Equipment
- frying pan
- Potato masher
Ingredients
- 1 kg Mashed Potatoes About 6 large potatoes
- 1-2 tsp Piri Salt or Seasoning Powder Add acording to preference
- 1 Pack Smoked Bacon Chopped into small pieces
- 2 tbsp Milk
- 1 Medium Egg
- 4-5 tbsp Plain Flour
- 1 Pinch Ground Black Pepper
- Vegetable Oil to fry
Instructions
- Add the salt to the Mashed Potato and stir through to throughly mix
- Fry the bacon and add to the mashed potato
- Stir through the milk and the eggs – You will get quite a sloppy mixture
- Form potato cake shapes (about the width of your hand and 1cm deep)
- Dip into the flour, making sure they are well covered
- Shallow Fry in the vegetable oil until each side is golden (You might need to add more oil) – Flip part way through
- Blot onto a sheet of kitchen roll to remove any excess oil and eat whilst hot.
