
About the recipe
Its been a while since I got any real satisfaction from trying out a new recipe – I’ve done some baking but the recipes have either been too complicated or I haven’t been that happy with the results. Not one to give up though, I tried a new combination yesterday and it worked!! I wanted something simple and guaranteed to turn out so went with vanilla muffins with a jammy centre.
I introduce my Jammy Muffins with Streusel – Believe me, once you start experimenting with adding streusel to your bakes, you won’t look back. But more about streusel later.
We went with seedless raspberry jam for these muffins (Its about as exotic as my girls will allow) but a wonderfully tangy blueberry jam or even a marmalade can turn these into a completely different taste experience.

Jammy Muffins with streusel
Ingredients
4 oz Cold Butter Chopped into tiny cubes
2 oz Demerara Sugar- 1.5 oz Plain Flour
Streusel
- 10 oz Plain Flour
- 2 tsp Baking Powder
- 1.5 tsp Bicarbonate of Soda
- 1 Pinch Salt
- 4 oz Cold Butter
- 4 oz Caster Sugar
- 2 lge Eggs
- 1 tsp Vanilla Extract
- 8 fl oz Milk or cream I use Full Fat Milk
- 12 tsp Jam Whatever flavour you prefer
Muffins
Instructions
- Make the streusel first by mixing together the butter, flour and sugar – cut through with a knife until in small lumps and stick in the freezer until the muffins are ready to go in the oven.
- Preheat the oven to 170C and line a 12 hole baking tin with cupcake/muffin cases
- Mix together the flour, salt, baking powder & bicarb in a large bowl.
- In a mixer, blend the sugar and butter until fluffy.
- Add the eggs and vanilla one at a time.
- Add the milk/cream and flour alternately until just mixed.
- Put 1 tbsp of cake batter into muffin cases.
- Add 1 tsp of jam into each case.
- Distribute the rest of the batter mixture on top of the jam.
- Get the streusel out of the freezer and sprinkle over each muffin.
- Bake for 16-18 minutes until golden and a knitting needle comes out clean when pierced (try to avoid going through the jammy bit! ;-))
- These taste amazing when they are still warm but definitely try to eat them on the same day.
What is Streusel?
A crunchy topping that makes a wonderful addition to your cakes and bakes. This recipe for streusel is incredibly versatile. You will think that you are putting far too much on but you need quite a bit to make the most of that crisp. Its basically butter, flour and sugar baked to a crisp.
How long can streusel last for?
It really needs to be eaten the same day or early the next at most. After this time, it will start to soften but will still taste lovely.
