Kahlua & Walnut Chocolate Brownies

Dense Chocolate Brownies with the taste of Kahlua and crunchy walnuts

I recently received a bottle of Kahlua as a gift and knew exactly what I wanted to do with it! These rustic looking chocolate Brownies have just the right amount of coffee Kahlua taste with a welcome crunch from the walnuts. I urge you, if you have a bottle lingering in the alcohol cupboard – make use of it, you won’t regret it.

Kahlua & Walnut Brownies

Rich chocolately Brownies with Kahlua liqueur and crunchy walnuts

Ingredients
  

  • 200 grams Butter
  • 100 grams Dark Chocolate
  • 100 grams Milk Chocolate
  • 4 large Eggs
  • 300 grams Dark Soft Brown Sugar
  • 1 tbsp Vanilla Extract
  • 3 tbsp Kahlua
  • 200 grams Plain Flour
  • 5 tbsp Cocoa Powder
  • 125 grams Chopped Walnuts

Instructions
 

  • Grease & line a 9" square brownie/cake tin – I always find silicone is the best for brownies
  • Preheat the oven to 180C
  • In a medium pan, heat the butter and chocolate until melted. Add the sugar and continue until all melted. Mix thoroughly
  • Leave to cool for appriximately 5 minutes then whisk the eggs in – You need the mixture to only be tepid or the eggs can scramble
  • Stir in the vanilla and Kahlua and fold in the nuts
  • Gently fold in the cocoa and flour and transfer the mixture to the tin
  • Bake for 20-25 minutes. if the mixture looks too runny or wobbly, give it another couple of minutes. You are not expecting a skewer to come out of brownies clean as the fudgy centre makes them extra special
  • Leave to cool and cut into squares

Tips for making Brownies

As with most Brownie recipes, these will freeze brilliantly – the flavour develops over time. We very rarely ever manage to get any Brownies as far as the freezer thoughts they disappear. If you do get as far as the freezer – these are best wrapped fresh baking parchment then an outside layer of tinned foil before placing in a tupperware box.

The nuts are optional and as usual can be replaced with pecans. If you don’t fancy nuts at all, why not try additional chocolate in the form of chocolate chip?
