Lime & Mint No Mayo Potato Salad (with New Potatoes)

Jersey Royals Potato Salad

This no mayo potato salad is the one I make when I want something lighter than the classic creamy versions. Warm Jersey Royals (or any waxy new potatoes) get tossed in a simple lime, mint and butter dressing that soaks straight into the potatoes for a fresh, zesty finish. If you’re planning a buffet, you might also like my Carrot & Courgette Sesame Salad.

We usually keep it simple with peas (because they’re always in the freezer), but it’s brilliant with asparagus in spring or a handful of blanched green beans too.

Lime & Mint Potato Salad

The beauty of Jersey Royals (Baby Jersey Royals like I used in my recipe) is that there is no need to peel, giving your salad an earthy, nutty taste. Just a quick scrub under running water and you are set to go. I chopped each Baby Royal in half which speeds up the cooking and makes assembly of the salad super quick afterwards.

Jersey Royals Potato Salad

A few facts about Jersey Royals:

  • Jersey Royals can only be called that if they are grown on Jersey.
  • Their heritage dates back over 140 years.
  • Jersey Royals are a protected name (PDO) under the UK scheme – Like Wensleydale Cheese & Melton Mowbray Pork Pies.

Ingredients for No Mayo Lime & Mint Potato Salad

  • Jersey Royal Potatoes – Or any waxy salad potato that won’t fall apart when cooked. You want your potatoes to keep their shape. Maris Piper and King Edward potatoes do not really work in a potato salad.
  • Butter – Real butter brings out the flavours of the vegetables really well. If you are avoiding butter, you can try to use Olive Oil instead.
  • Lime (Zest & Juice) – Don’t omit the zest, it really makes the difference and is worth doing.
  • Fresh Mint Leaves – I haven’t tried using dried mint but its worth a try if you have no fresh.
  • Garden Peas – Frozen are great but fresh are equally as good!
  • Salt & Pepper – I really like a sprinkle of coarse sea salt just before serving and a grind of black pepper but add according to taste.

What is a good substitute for mayonnaise in potato salad?

A lot of people struggle with the texture of mayonnaise and this potato salad is perfect for them. This Lime & Mint Potato Salad contain no hidden nasties or preservatives, just simple ingredients – Butter does have high calories so needs to be used in moderation. Olive oil makes a good substitute if you prefer but butter definitely tastes better in this recipe.

Can potato salad be healthy?

It can definitely be healthier than many shop bought, pasta salads. To make this salad even healthier, increase the amount of vegetables you add.

What kind of potatoes are best for potato salad?

Waxy potatoes like Jersey Royals (used in this recipe), Charlotte potatoes and Desiree all work well.

Can I make this ahead?

You can make this the day before but it is better to make it on the day.

Can I freeze potato salad?

No, potato salad does not freeze well as the potatoes can go slimy when defrosted.

Lime and Mint No Mayo Potato Salad

Fresh and light no mayo potato salad with Lime and Mint. Great with Jersey Royal or Salad Potatoes.

Equipment

  • 1 Pan Medium
  • 1 Grater For zesting your lime

Ingredients
  

  • 450 grams Salad Potatoes Jersey Royal or Waxy potatoes
  • 50 grams Butter
  • 1 medium Lime
  • 9 medium Fresh Mint Leaves
  • 50 grams Frozen Peas
  • Salt & Pepper

Instructions
 

  • Halve baby potatoes (leave very small ones whole). Boil in salted water for ~12 minutes until just tender.
  • Add peas for the last 2 minutes. Drain well, then leave the potatoes in the hot pan for 1 minute to steam-dry.
  • Melt butter. Stir in lime juice + zest (stir well).
  • Stir in mint, then season with pepper (and salt if needed – I really like a sprinkle of coarse sea salt).
  • Toss through the warm potatoes and peas. Serve warm, or cool then chill.
