Mushroom & Walnut Palmiers

Mushroom Walnut Pate Palmiers

How versatile these lovely little pastries are - I make both sweet and savoury regularly but decided on savoury for this challenge with my Mushroom & Walnut Palmiers. Nuts and mushrooms are such a great combination and the crunch of the walnuts gives these Palmiers a little something extra.

The base of these is a homemade mushroom pate that it just as wonderful spread on crackers - I use a tiny clove of garlic as I'm not a huge garlic fan but if you like garlic, go ahead and add more. I used Forestier Mushrooms and Closed Cup Mushrooms (which you will see from the picture were reduced. Yay!) Chestnut Mushrooms also go very well with these as do Dried Porcini Mushrooms. There is no way that I can make Mushroom Pate look appealing (See picture below) - You are just going to have to believe me that it tastes divine!

Mushroom & Walnut Palmiers
Serves 10-12

Cook time 20 minutes

Crispy goden Puff Pastry Palmiers with a rich Mushroom & Walnut Pate Filling

Ingredients

  • 1 packet Puff Pastry (375g)
  • splash Olive Oil
  • 1 Shallot (Finely Chopped)
  • 1 clove Garlic (Finely Chopped)
  • 250g Mushrooms (See note above about which mushrooms to use)
  • 1 teaspoon Worcester Sauce
  • 1 sprig Fresh Rosemary
  • ½ sprig Fresh Thyme
  • 50g Walnuts (Broken into small chunks)
  • 1 pinch Black Pepper

Directions

Mushroom Pate
1.
Preheat the oven to 210C & line a baking tray with baking parchment. In a large saute or frying pan, heat the olive oil and add the chopped shallot

Cook for 2-3 mins until pale and soft then add the chopped garlic and continue to cook for 1 minute
3.
Add the chopped mushrooms, walnuts, Worcester Sauce, pepper and fresh herbs and cook through for around 3-4 minutes or until soft and cooked through
4.
Remove from the heat and blend in a food processor until fairly smooth - I like a certain texture to my pate so don't blitz for too long but do to your taste. This is nice as a pate on crackers and can be kept chilled for up to 2 days at this point
Palmiers

Roll out the Puff Pastry and spread the pate in an even layer across the top - I sometime add some more chopped walnuts on top of the pate for some extra crunch at this point
6.
Roll in the 2 long sides to meet each other in the centre and make palmier shapes (otherwise known as Pig's ears or Elephant Ears)
7.
Cut into 1cm wide slices. Traditional recipes advise to chill for approx 20 minutes at this point to keep the Palmiers shape but if you are in a rush, I have never found a problem with cooking straightaway
8.
Bake for approx 20 minutes or until risen and golden brown. Eat on the same day
