I’m all over the sales this year – no, not clothes, shoes and handbags. I’m talking about the bargains to be had in the food aisle. These Apple Fritters were born from the ultimate bargain at our local supermarket.

So far we have devoured a turkey from Tesco that should have been £32 but on Boxing Day was reduced to an amazing £4.95.
I did get super excited at our local Tesco Express today though when I spotted fresh herbs for 3p!!! I trotted off with some thyme and some sage. The checkout operator even commented how cheap they were and then asked me what I was going to do with them. Talk about put me on the spot! I didn’t think “I’m a food blogger and I can’t resist buying food” was going to go down that well, so I made something up about making fritters with sage and freezing thyme.

So there I was, in the Costello kitchen making sage fritters – Whether we wanted them or not! To be honest, they are really easy and quick – the girls love them (as long as there is plenty of sugar over them and not too much sage). The tricky part is taking their photos – Almost impossible not to make them look really unappealing.
Ingredients for making Apple Fritters
- 2 Large Apples – I used Pink Lady
- 125g Organic Plain White Flour
- 1 tsp salt
- 1 tsp baking powder
- 35g Granulated or Caster Sugar
- 1 large egg
- 125ml milk (I sometimes add a little bit more if the mixture seems a little too thick)
- 1/2 tsp cinnamon plus another 1/2 tsp for the separated mixture
- 8 sage leaves, chopped finely
- Enough oil to cover the bottom of your frying pan and about 1cm in height

Apple Fritters
Ingredients
- 2 Large Apples I use a tangy apple like Pink Lady or Granny Smith
- 125 g Organic Plain White Flour
- 1 tsp Salt
- 1 tsp Baking powder
- 35 g Sugar Granulated or Caster are fine
- 1 large Egg
- 125 g Milk I sometime add more if the mixture seems too thick
- 1 tsp Ground Cinnamon plus
- 8 Sage Leaves Chopped very finely
- Vegetable Oil Enough to cover the bottom of your frying pan and about 1cm height
Instructions
- Peel & Chop the apples into very small chunks. These fritters take hardly any time at all to cook so you want the apple to be small enough to soften
- In a large bowl, put the flour, salt, baking powder and sugar
- Whisk the egg and add alternately with the milk until all combined
- Add the apples and 1/2tsp of the cinnamon
- This is now your base mixture
- Add the sage to one half and the extra 1/2 tsp cinnamon to the other
- Heat your frying pan and drop the mixture in – a teaspoon at a time – You don't want any bigger as the outsides will cook too quickly and the middle may not be completely done
- You will probably get away with doing about 5 fritters at once
- Turn over after a few seconds, when the bottom is golden – B Careful, they are easily overdone!
- After about 30-40 seconds or just before they are the colour you think they should be (Trust me!) remove from the pan ad leave to dry on kitchen paper
- Sprinkle each of the sage fritters with sugar – I like the cinnamon fritters sprinkled with icing sugar
