Peel & Chop the apples into very small chunks. These fritters take hardly any time at all to cook so you want the apple to be small enough to soften
In a large bowl, put the flour, salt, baking powder and sugar
Whisk the egg and add alternately with the milk until all combined
Add the apples and 1/2tsp of the cinnamon
This is now your base mixture
Add the sage to one half and the extra 1/2 tsp cinnamon to the other
Heat your frying pan and drop the mixture in - a teaspoon at a time - You don't want any bigger as the outsides will cook too quickly and the middle may not be completely done
You will probably get away with doing about 5 fritters at once
Turn over after a few seconds, when the bottom is golden - B Careful, they are easily overdone!
After about 30-40 seconds or just before they are the colour you think they should be (Trust me!) remove from the pan ad leave to dry on kitchen paper
Sprinkle each of the sage fritters with sugar - I like the cinnamon fritters sprinkled with icing sugar
