My obsession with all things pastry continues! Seriously, I need to start making recipes than are non-pastry but for now simply indulge in these super easy but amazingly tasty Apple & Passion Fruit Puff Pastry Puffs. If you want a healthier version, I suppose the Apple & Passion Fruit Filling could be served on its own with maybe some frozen fat-free yogurt and still be delicious. But where's the fun in that? You must experience the crunch of the sugar topped pastry (and the flakes that will definitely go down your cleavage!)

Crispy, tangy & light Apple & Passion Fruit Puffs
Ingredients
- 1 packet 1 packet Ready Rolled Puff Pastry 375G
- 4 Medium Apples (I used Jazz Apples - Tangy are best) (Peeled & Chopped into small cubes)
- 3 tablespoons Soft Brown Sugar
- 4 Passion Fruit Pulp
- 1 tablespoon Vanilla Extract
- 200ml Water
- 1 Egg
- Milk to glaze
- 2 tablespoons Demerara Sugar
Directions

Preheat the oven to 200C and line 2 baking trays with baking parchment. Take the puff pastry out of the fridge to come to room temperature | |

In a large frying pan or saute pan, sweat the apple, sugar and water for 10 minutes until really soft. | |

Add the passion fruit pulp and the vanilla and continue to cook through for another 2-3 minutes. Remove from the heat | |

Cut the puff pastry into 4-5 inch squares and spoon 2 tbsp of the apple mixture onto the bottom half of each square. Leave a ½ inch gap around the edge | |

Whisk the egg and brush the edges of the pastry and fold over to make rectangles (or triangles if you prefer). Press down the edges until sealed and make indents with the back of a fork | |

Brush the top of each square with milk and sprinkle over the demerara sugar | |

Bake for 18-20 minutes until golden. Remove from the oven and allow to cool |

Fate! I picked a huge bag of apples yesterday and 'just happen' to have some passion fruits that need using. Do you strain out the seeds or leave them in please? Great recipe and flavour combination. I'm not very confident with link ups but I will try to become more involved. Great post xx.

Absolutely love the sound of your fruit puff, they remind me of an apple turn over I used to enjoy from a high street bakers many many years ago! Nothing worse than a slow internet connection Helen.

Made these today...delicious...look like McDoanldsapple pies. Just one thing..cool the filling right down before putting into the pastry.
