Its #BramleyAppleWeek so as part of my plan to be more seasonal during 2015, I have an apple recipe this week. I like my cupcakes to have something different about them these days - I think I overdosed on frosting during my days of charity events when I used to bake up to 500 cupcakes (and eat a few too!)
The apple pie mixture is rich, cinnamony and heavenly - There's plenty left over as I make a huge batch. I will be making apple turnovers later today to carry on the apple theme.
I use a mixture of Bramley Apples and Granny Smiths but this mixture works well with any type of tangy, strong apples - Save your Golden Delicious for feeding horses!

Ingredients
- 2 Bramley Apples
- 4 Granny Smith Apples
- 3 + 2 + ½ teaspoons Ground Cinnamon
- 7oz Granulated Sugar
- 6fl oz Water
- 14oz Self Raising Flour
- 8oz Butter
- 12 + 2oz Caster Sugar
- 4 Eggs
- 1 teaspoon Vanilla Extract
- 9fl oz Milk
- 1 packet Ready Rolled Puff Pastry
Directions
Apple Pie Mixture | |
1. | |
Peel the apples and chop into very small cubes. | |
2. | |
Place in a medium sized pan, with the granulated sugar and 3 tsp of the ground cinnamon | |

Heat for at least 10 minutes until the apples have broken down and the mixture has thickened. Keep stirring. | |

Remove from the heat and allow to cool - This can be placed in the fridge for 2-3 days or frozen for up to 1 month | |
Cinnamon Cupcakes | |
5. | |
Preheat the oven to 180C and line 24 muffin tin with liners. Using an electric mixer, whisk the butter and 12 oz of the caster sugar until pale and fluffy | |

Add the eggs, one at a time, whilst still whisking. Clean down the sides of the bowl with a spatula regularly to make sure all the mixture is combined. | |

Add the vanilla and 2 tsp of the cinnamon. | |

Add the milk and the flour alternately, whilst mixing on a low speed, one tablespoon at a time. | |

Bake for 22-25 minutes - they will be darker than vanilla cupcakes due to the cinnamon so make sure they are fully done | |

Remove from the oven and allow to cool | |
Assembling the cupcakes | |

Once the cakes have cooled, heat the oven back to 220C and scoop out 1 teaspoon from each cupcake | |

Fill the hole with some apple pie filling | |

Mix together the remaining caster sugar and cinnamon | |

Roll out the puff pastry and cut out circles using a cutter the size of the top of the cupcake - For extra decoration I also cut out pastry leaves and embossed using a sugarcraft leaf mould | |

Brush the top of each pastry circle lightly with cooled boiled water - Stick the leaf on the top middle and sprinkle over the cinnamon sugar | |

Bake for 10-12 minutes - watch out that they don't catch in the oven | |

Remove from the oven and allow to cool |
