Malt Loaf Rocky Road

I’ve gone quite simple with this Malt Loaf Rocky Road – You still get the juicy tenderness and sweet taste of the Malt Loaf but also the famous taste of the chocolate and marshmallows. I didn’t expect to love this as much as I did though – Its very addictive – I reckon Soreen Rocky Road will now become a regular thing in our house!

I’ve always been a fan of Malt Loaf – It was like a big treat when my Mum used to buy it when I was a child. I’ve passed that love onto my girls thankfully – We now have to buy these in 2’s as they don’t last 5 minutes in this house.

What makes a good Rocky Road?

Occasionally for me, a Rocky Road can be a little too solid. Its definitely a preference thing but I prefer more ingredients and less solid chocolate in my Rocky Roads. I like each bite to taste slightly different to the last – The chewiness of the Malt Loaf makes this super easy.

Some people like to add extra raisins to their Rocky Road. I don’t find this necessary due to Malt Loaf containing them but if raisins are your thing, go for it!

Tip: If you are adding more than 100g of other dry ingredients, you may need to up the amount of melted chocolate you are using too. This will make sure it all combines and doesn’t fall apart when you try to eat it.

What else can I put in Rocky Road?

I’ve gone quite traditional with the other ingredients in my Malt Loaf Rocky Road but there’s plenty of other alternative ingredients you could add.

  • Chopped Almonds
  • White or Dark Chocolate Chips
  • Chopped Marzipan
  • Chopped Apricots
  • Smarties or M&Ms

Why is Malt Loaf good for me?

For the sweet toothed, a malt loaf contains around 40% less sugar than the average shop bought cake. (This obviously doesn’t count if you are including in this recipe for Malt Loaf Rocky Road!) They are really transportable for picnics and great for emergency snacks as they can be hard wearing at the bottom of a handbag. Shop bought Malt Loaves are now classed as Vegan by the Vegan Society.

(Handy Tip: If you have a toddler who is a little ‘bunged up’ Malt Loaf can help speed up their digestion and make them a little more regular – Now aren’t you glad I shared that!?)

How long will Rocky Road last for?

Once Rocky Road is chopped it can be stored in a cake tin with a lid for around 1 week. This is slightly less than a traditional Rocky Road which can last up to 3 weeks. This is due to the extra moisture content that the Malt Loaf adds.

Can I freeze Rocky Road?

Yes, Rocky Road freezes well. Its great to have ready chopped or whole in the freezer, wrapped in baking parchment, then foil. Defrost at room temperature for around 12 hours.

Malt Loaf Rocky Road

Every bite of this Chocolate Rocky Road recipe is slightly different. A fruity chewiness from the Malt Loaf, dense melted chocolate and wonderful sweetness from the marshamallows. The ultimate picnic dessert or packed lunch treat.

Equipment

  • Microwave
  • 8" square cake tin

Ingredients
 
 

  • 190 g Malt Loaf Small Loaf
  • 8 Digestive Biscuits
  • 200 g Melted Milk Chocolate
  • 50 g Glace Cherries Chopped into quarters
  • 50 g Mini Marshmallows

Instructions
 

  • Line an 8" square cake tin
  • Chop the Malt Loaf into 1cm squares
  • Crush the Digestive Biscuits – I prefer to leave some chunkier pieces to add a crunch in some bites
  • Mix the biscuits and the malt loaf in a large bowl. The biscuits crumbs should coat the malt loaf to stop it clumping together
  • Add the chopped cherries and the mini marshmallows and stir
  • Pour over the melted chocolate and mix well
  • Add to the cake tin and press down until quite solid.
  • Refridgerate for at least 1 hour (overnight is good).
  • Cut into 12 even squares and enjoy.

Notes

If you decide to leave your Rocky Road in the fridge for longer, you may wish to chop into squares after just 1 hour.

    Oh Oh oh ! Never used as an ingredient but now my head is like ooohhh!

    Right now I have a half a malt loaf left.. About 3 glace cherries and reckon I can hunt down the rest but the big but is lacking chocolate. Though I have got half a bar of dark chocolate with ginger left….hmm..puts tv on pause…

    Mmmmm haven’t had malt loaf for years… was a childhood tea-time fave of mine. Such a great idea to bung some into a fridge cake… will def be trying that on for size 🙂
