There’s a possibility I am becoming slightly addicted to blueberries – a punnet doesn’t last a day in this house. I’m sure they are juicier & tastier than ever this year. We are still fighting the never ending battle to reduce our sugar intake – I will honestly admit that I’m addicted to sugar and know I need to reduce my intake. Its birthday week in this house & I know that many treats will be consumed over the next few days so thought I try the girls out with a healthier reduced sugar bake, blueberry muffins.
I make these in 2 shapes – traditional muffin cases and also these long, thin bite sized muffins – Normal muffin cases are still used to line the rectangle tins, just press down the corners to make a squarer shape. The magic of blueberries really happens in the oven – I would love an oven-cam to watch how the blueberries explode. You never know how they are going to turn out.
REDUCED SUGAR BLUEBERRY MUFFINS

INGREDIENTS
- 50g Melted Butter
- 3 Medium Eggs
- 4 tablespoons Olive Oil
- 2 Limes (Fresh grated zest)
- 1 teaspoon Vanilla Extract
- 150ml Milk
- 300g Self Raising Flour
- 125g Caster Sugar
- 200g Fresh Blueberries
DIRECTIONS

| Preheat the oven to 180C and line the muffin tins with cases | |

| Mix together the melted butter, beaten eggs, vanilla, lime zest & milk in a large bowl | |

| Fold in the dry ingredients, making sure the blueberries are evenly distributed | |
| 4. | |
| Scoop into the muffin cases and bake for 18 minutes or until golden and a skewer comes out clean | |
| 5. | |
| Leave to cool in the tins | |

I do love blueberry muffins and the recipe I normally use got something like over 300g sugar in it and although it produces the most wonderful muffins the guilt is there every time! I will so be trying your reduced-sugar version as I like having cake and eating it too (without the guilt)! 🙂 Pinned for later!
