Reduced Sugar Carrot Cake Cookies

Carrot Cake Cookies

I'm starting a one woman mission to reduce my sugar intake this week. I'll be honest, its not gone too well - I keep forgetting and eating Rainbow Drops. I did remember in time though, when I came to bake this week's #Bakeoftheweek and baked reduced sugar Carrot Cake Cookies. I've adapted the recipe I use to make my Carrot Cake (which I've just discovered I have never blogged!). If you want a sweeter taste, you can add another 100g of sugar - Try it without, they are really quite tasty!

Drizzled Carrot Cake cookies

Now, I knew that there was no way my kids would be tempted by the normal drizzly cookies so I wanted to make them look a little more fun. I melted some white chocolate and coloured some pale orange and green and piped some VERY rough carrots on them. Ta-dah! It worked and Tara couldn't resist. I also chopped the big round cookies in half so they weren't overwhelming for little tummies.

Carrot Cake Cookies with White Chocolate carrot Topping - Perfect snack for Easter

Ingredients

  • 200g Butter
  • 200g Dark Brown Sugar
  • 2 Large Eggs
  • 2 Large Carrots (Peeled & finely grated)
  • 200g Plain Flour
  • 2 teaspoons Baking Powder
  • 2 teaspoons Vanilla Extract
  • 2 teaspoons Ground Cinnamon (If you like quite a strong taste, add another tsp)
  • pinch Salt
  • 150g Rolled Oats (I used chunky)
  • 50g Sultanas or Raisins
  • 50g Pecans (Broken into small chunks)
  • 100g Melted White Chocolate

Directions

1.
Preheat the oven to 180C and line 2 baking trays with baking parchment
2.
Using an electric whisk, mix the butter and sugar until well combined
3.
Still mixing, add the eggs, vanilla and cinnamon
4.
Stop the whisk & fold in the flour and baking powder
5.
Pat down the grated carrot with a few sheets of kitchen paper to reduce as much moisture as possible and fold into the rest of the mix
6.
Fold in the oat, sultanas and nuts
7.
Scoop out biscuit sized portions and place on the baking trays. These cookies do not spread out too much but leave at least 1-2cm between each cookie
8.
Bake for 10 minutes, then if you are intending on decorating the cookies, press down flatter with the back of a metal spoon. Can be left rounded if you are keeping them rustic
9.
Continue to bake for another 8-10 minutes until turning a dark golden and remove from the oven. Leave to cool on the baking tray then drizzle with the melted chocolate

Chocolate Cannellini Cake Mothers Day
