I'm starting a one woman mission to reduce my sugar intake this week. I'll be honest, its not gone too well - I keep forgetting and eating Rainbow Drops. I did remember in time though, when I came to bake this week's #Bakeoftheweek and baked reduced sugar Carrot Cake Cookies. I've adapted the recipe I use to make my Carrot Cake (which I've just discovered I have never blogged!). If you want a sweeter taste, you can add another 100g of sugar - Try it without, they are really quite tasty!
Now, I knew that there was no way my kids would be tempted by the normal drizzly cookies so I wanted to make them look a little more fun. I melted some white chocolate and coloured some pale orange and green and piped some VERY rough carrots on them. Ta-dah! It worked and Tara couldn't resist. I also chopped the big round cookies in half so they weren't overwhelming for little tummies.
Carrot Cake Cookies
Serves | 12-15 |
Prep time | 15 minutes |
Cook time | 20 minutes |
Total time | 35 minutes |
Meal type | Dessert, Snack |
Misc | Child Friendly, Pre-preparable, Serve Cold |
Occasion | Easter |
Ingredients
- 200g Butter
- 200g Dark Brown Sugar
- 2 Large Eggs
- 2 Large Carrots (Peeled & finely grated)
- 200g Plain Flour
- 2 teaspoons Baking Powder
- 2 teaspoons Vanilla Extract
- 2 teaspoons Ground Cinnamon (If you like quite a strong taste, add another tsp)
- pinch Salt
- 150g Rolled Oats (I used chunky)
- 50g Sultanas or Raisins
- 50g Pecans (Broken into small chunks)
- 100g Melted White Chocolate
Directions
1. | |
Preheat the oven to 180C and line 2 baking trays with baking parchment
2. | |
Using an electric whisk, mix the butter and sugar until well combined
3. | |
Still mixing, add the eggs, vanilla and cinnamon
4. | |
Stop the whisk & fold in the flour and baking powder
5. | |
Pat down the grated carrot with a few sheets of kitchen paper to reduce as much moisture as possible and fold into the rest of the mix
6. | |
Fold in the oat, sultanas and nuts
7. | |
Scoop out biscuit sized portions and place on the baking trays. These cookies do not spread out too much but leave at least 1-2cm between each cookie
8. | |
Bake for 10 minutes, then if you are intending on decorating the cookies, press down flatter with the back of a metal spoon. Can be left rounded if you are keeping them rustic
9. | |
Continue to bake for another 8-10 minutes until turning a dark golden and remove from the oven. Leave to cool on the baking tray then drizzle with the melted chocolate |
Thanks so much to Sarah for hosting last week's #Bakeoftheweek. It feels so good to have support and new life being brought to our gang. Thanks too, to everyone who submitted entries last week too. I truly do love visiting all your bakes.
My featured recipe from last week is Tin & Thyme's Chocolate Cannellini Cake - yes, a cake using a tin of cannellini beans. This beautiful cake was made to celebrate Mothers' Day but also gives a nod to it being the UN International Year of Pulses.
I've grouped this week's entries into Bakes containing fruit - or Vegetables.
1. I love this time of year for baking, Linzi from Lancashire Food has shared her pretty stunning Marbled Banana & Chocolate Hazelnut Loaf
2. Wonderful pink colour in Winnie's dried strawberry Haman's Ears - These do make me smile!
3. One of my ultimate favourites for this time of year, Simnel Cake from FarmersGirl Kitchen
4. Another marble cake - they are just so effective and stop chocolate cakes from becoming too 'chocolatey' - Chocolate Swirled Banana Loaf from PotPourri
5. Making a welcome return to Bake of the Week, Nelly's Cupcakes with a lovely post about her Mum's Banana Bread
6. Fantastic colour and great use of Carrot juice in Domestic Gothess' Carrot & Caraway Seed Bread
7. A dessert that will be full of taste, Rhubarb & Ginger Crumble from Only Crumbs Remain. The important question is whether you are custard or ice-cream with it?
8. A brilliant recipe for anyone who need Gluten-free, Dairy-free & Fructose Free - Simple Lemon Drizzle Cake from the Free From Fairy.
9. Definitely some of the most creative cupcakes I've seen for a while, Meatloaf Cupcakes with Sweet Potato Frosting - Just brilliant from Foodie Quine
10. I'm definitely making Hot Cross Buns this Easter, Maison Cupcake has gone one step further already though, with her Slow Cooker Bread Pudding with Hot Cross Buns.
11. Making the most of using up unwanted cereal, Mummy Mishaps with Mini Egg Krispy Cakes.
Ah, thanks for featuring my cake Helen. It proved to be quite a success - who would have thought a tin of beans could be put to such good use 😉
