Speculoos Crumble Cookies

Firstly a huge thank you to everyone for all your kind words following my post last week. We are slightly brighter as time goes on but still missing our little guy SO MUCH! It feels far too long since I caught up with #BakeoftheWeek. I’d like to share with you today, my Speculoos Crumble Cookies. These are made for an extra little snack in the girls’ packed lunches (OH I could go on for so long about how packed lunches take over my life but that’s a post for another day). These have a gently spice taste to them – nowhere near as strong as those little biscuits you get with coffee. Nowhere near as sweet either so I don’t feel too guilty popping them in the lunch boxes. If you want to be extra good, you can leave out the sprinkling of caster sugar on top of the cookies, but quite honestly this is part of their charm.

Speculoos Crumble Cookies

Cook time 30 minutes
Total time 1 hours, 15 minutes

Crumbly, lightly spiced Speculoos Cookies - perfect for packed lunches

Ingredients

  • 250g Plain Flour
  • 1.5 teaspoons Speculoos Spice Mix (I use Steenbergs)
  • 1 pinch Salt
  • 1 Medium Egg Yolk
  • 1 tablespoon Caster Sugar (Plus 3 teaspoon for sprinkling on top)
  • 160g Butter (Softened to room temperature)

Note

If you like a stronger spiced cookie, then add another 1/2 tsp of Speculoos Spice

Directions

1.
Preheat the oven to 170C and line 2 baking trays with baking parchment. In a medium sized bowl, mix together the flour, salt and spice mix
2.
Add the butter and 1 Tbsp sugar and mix using a kitchen knife
3.
Add the egg and bring together as a dough with your hands. Make sure all the mixture is well combined
4.
Roll out the dough to a depth of about 5mm on a lightly floured surface.
5.
Cut out small circles using a fluted scone cutter. Sprinkle over the remaining caster sugar evenly & freeze for 15/20 minutes
6.
Bake for 30 mins. Leave to cool on the baking tray and enjoy!

    Those crumble cookies look very moreish. I love spice and also cookies that aren’t overly sweet. Can I have one in my lunch box too please?

    These look so good! Some of my favorite cookies are the easiest to make with just a few ingredients. My grandson is coming to visit over the weekend and I think we’ll give these a try. Time in the kitchen is our favorite thing!

    I love this sort of cookie! The recipe seems easy enough, so I’ll be giving them a try. I’m trying to be more mindful of my diet, but as a special treat these look perfect. I think I’ll make them for our next road trip as a snack!

      HI Natalie, its the spice that goes into those thin biscuits that you get with your coffee. Once you buy some speculoos, you will want to put it in everything! x
