Today, I’m sharing my Balsamic & Honey Chicken Salad – I’m not the biggest salad lover so for me to shout about a salad means it must taste pretty amazing. And this does!
I’m trying to use up our freezer food – Its no small task, we have a huge freezer inside and a chest freezer outside. The chicken was the easiest to lay my hands on and we always have supplies of Balsamic & Honey. The chicken on its own is just great but mixed with the peppery greens (which incidentally was reduced to a bargain price) and nuts, this is such an interesting dish.
BALSAMIC HONEY CHICKEN SALAD

INGREDIENTS
- 3 Chicken Breasts (Cut into 2cm cubes)
- 6 tablespoons Balsamic Vinegar
- 3 tablespoons Runny Honey
- 1 packet Mixed Leaves (I like strong peppery ones with rocket)
- 1 Red Pepper (Chopped into small chunks)
- 1 Large Handful Chopped Walnuts
DIRECTIONS

| Mix the Raw Chicken and Vinegar and Honey in a small dish until all the chicken is well covered. Wrap in cling film and place in the fridge for at least 2 hours – preferable 4-6 hours | |

| After the chicken has marinated, remove as many chunks of chicken that you can cook in a small frying pan with a slotted spoon – You want the sauce to remain behind | |

| Dry Fry the chicken until cooked through – approx 5 minutes depending on how small you chopped it. You can also do this stage on the BBQ which tastes amazing | |

| Repeat for each serving until all the chicken is used up | |

| Pour the remaining vinegar/honey sauce into a small saucepan and heat well until boiling – Do not allow to burn but keep bubbling for 1-2 mins until it starts to reduce slightly and thicken | |

| Pour back over the chicken and immediately serve on top of a bed of the leaves, nuts and pepper – I prefer to mix it all together so well dispersed | |
