There’s still time to make these even on Valentine’s Day itself. They set quicker than other recipes I’ve made in the past for coconut ice – The ultra sweet snack that is usually found in square pieces. If you don’t have time to make the heart shapes and stick them on lolly sticks, squares placed into cellophane bags make a brilliant present too.
VALENTINE’S RASPBERRY COCONUT ICE POPS

INGREDIENTS
- 397g Tin of Condensed Milk
- 500g Icing Sugar
- 400g Desiccated Coconut
- 8 Large Raspberries
- wedge White Chocolate (Small amount for sticking to the end of the lollipop sticks)
NOTE

DIRECTIONS

| Line a 9″ square silicone tray or cake tin with baking parchment | |
| 2. | |
| Mix the condensed milk, icing sugar and coconut in a large bowl – You will need a sturdy spatula as this is a really thick mixture | |
| 3. | |
| Once the mixture is fully combined, separate into 2 halves | |
| 4. | |
| Mush the raspberries up with a fork and mix thoroughly into half of the coconut ice mixture | |
| 5. | |
| Flatten the white half into the bottom of the silicone tray and press down firmly | |
| 6. | |
| Add the raspberry mixture on top and flatten down until evenly distributed | |
| 7. | |
| Keep in the fridge for at least 2-3 hours | |
| 8. | |
| Use a heart shaped cutter to make hearts – If your cutter is not deep, you might have to cut around the shapes to make sure they are fully cut (I had to do this) | |
| 9. | |
| Place back in the fridge for at least 30 mins | |
| 10. | |
| Melt the chocolate and dip the ends of the sticks into it, then insert into the base of the hearts (I found it easiest to go into the pink half as it is slightly looser consistency) | |
| 11. | |
| Place back in the fridge for at least 1 hour. Decorate with a ribbon and present to your loved one! | |



Oh I love these. They look like fantastic little treats to make for parties and special occasions. I love coconut but wish my family loved it too, I think I’d probably end up making them and then eating them all myself. Great recipe, thanks for sharing
