When the weather is biting cold & winter activities are draining your energy. It calls for soup. A warm, hearty, comforting vegetable soup with a difference. This Broccoli soup with added almonds was just what I yearned for last week. Make it as peppery as you like afterwards. Mr C definitely likes a bit of a kick to his soup, where I preferred for the subtle almond flavours to come through. Miss M has had her full brace fitted last week, so we are trying to eat soft foods that will be gentle on her teeth. I feel a second batch of this soup being made very soon. In fact, this is in the running for our Christmas Day starter.

Ingredients
- 2 Medium Broccoli Heads/Crowns (The equivalent of about 1 pound in weight)
- 1 Small Onion (Chopped finely if not using a soup maker)
- 50g Ground Almonds (+ toasted chopped almonds to serve)
- 150ml Vegetable Stock
- 1 Large Potato
- S&P to taste
Note
Add as much pepper as you like to give this soup an extra kick.
Directions
Soup Maker Version | |

Chop the broccoli away from the stalks and place in the soup maker | |

Add all the rest of the ingredients and turn to smooth | |

Serve immediately using the toasted chopped almonds as garnish | |
Non-Soup Maker Version | |

Chop the potato & Broccoli and boil until soft | |

Drain the cooking water. Gently fry the onions until pale & translucent and then add the vegetable stock. Simmer for 3-4 minutes | |

Add the ground almonds and continue to simmer for 1-2 minutes. Add more stock if necessary. | |

Blend using a hand blender until smooth. Add salt & pepper to taste. | |

Serve immediately with toasted chopped almonds |
