Mincemeat & Marzipan Wreath

Mincemeat & Marzipan Wreath

Please tell me its totally fine to start Christmas baking with a vengeance? I’m loving pottering around the kitchen at the moment. The days are so dark and cold here in Merseyside so my kitchen is a haven with lights & heating on full belt. I know this Mincemeat & Marzipan Wreath isn’t the prettiest or neatest, but its not for anyone else. Totally a quick bake that me & Mr C enjoyed at the end of the day. We really are run off our feet this year with Millie’s training, Vi & Tara’s dance rehearsals not to mention homework/Mock GCSE’s and after school activities.

I’ve included a ‘how to guide’ for achieving this rather messy rustic look but obviously there are all sorts of combinations of how to make a pastry wreath. As usual, I went totally overboard with how much mincemeat & marzipan I added so if you are hoping for a neater finish, then perhaps hold back. For me though, it was all about the taste.

MINCEMEAT & MARZIPAN WREATH

Mincemeat & Marzipan Wreath

INGREDIENTS

  • 1 packet Ready Rolled Puff Pastry (375g) (You will be left with some leftover cuttings)
  • 1/2 jar Mincemeat
  • 1 Lemon (Grated Zest of)
  • 50g Marzipan (Cut into small cubes)
  • 1 Egg

DIRECTIONS

1.
Take the puff pastry out of the oven and allow to reach room temperature (Around 30 minutes before needed)
2.
Preheat the oven to 210C and line a baking tray with baking parchment
3.
Cut out as large a circle as possible of the puff pastry
4.
Make indents of 2 smaller circles inside the large circle but do not cut through
5.
In the centre circle cut triangles that will be used to fold over the filling – I do quarters and then each quarter into 3
6.
Cut lines around the edge of the first circle (around the edge of the pastry circle). These will again be used to fold over the filling
7.
Spread the mincemeat around the solid circle then grate the lemon zest over the top
8.
Spread the little squares of marzipan over the mincemeat
9.
Fold every other outside pastry piece over the filling then pull up the centre triangles (Some mincemeat will poke through). Finish by folding over the remaining pieces of pastry
10.
Brush over with beaten egg and bake. After 15 minutes, reduce the heat to 180C and carry on baking for another 15 minutes until golden
11.
Sprinkle over with icing sugar and eat as soon as possible

    I am not a big fan of marzipan but I do love a good mince pie. This wreath looks fab and not messy at all

      Thank you Natasha – Yes it definitely still tastes good without the marzipan. The lemon zest gives it a zing!

    Marzipan is my all time favourite Christmas food ever! This sounds delicious! Even better, nobody else in my house likes it so I get to eat it all!

    What a perfect dessert for the Christmas table! It reminds me a little bit of the German Stollen, which has a lot of marzipan in it. Can’t believe how easy it is to make!

      There are so many ways that you can play around with pastry with your son and just add mincemeat & marzipan at the end. Have fun!
