Chocolate Fudge Mini Bundts

Chocolate Fudge Easter Mini Bundts

I made these as a treat for the girls yesterday. As I was making them, I realised how long it has been since I made Chocolate Fudge – I’m not sure I remember making it since Tara was born! Safe to say, she loved it – I make mine with dark chocolate so it is very rich but the girls love it.

Easter is brilliant for easy, pretty cake decorations – Cadbury’s Mini Eggs are everywhere and so quick to plonk on a cake. The super cute Easter chicks also work brilliantly but don’t taste quite so good!

I use a Mini Bundt Mould and Lakeland’s Mini Doughnut Tin – Both work equally well (The mini doughnut mould only needs approx 12-15 minutes cooking time as they are much smaller)

The flavour of the fudge gets better over time too. If you can manage it, save some for 24 hours later, when they taste amazing. If not, make double 😉

Chocolate Fudge Easter Mini Egg Bundts

CHOCOLATE FUDGE CAKE MINI BUNDTS

INGREDIENTS

  • 125 + 25g Butter
  • 125g Dark Brown Soft Sugar
  • 2 Medium Eggs
  • 2 + 2 tablespoons Golden Syrup
  • 2 teaspoons Vanilla Extract
  • 70g Dark Brown Chocolate
  • 125g Self Raising Flour (Plus extra for lining the bundt tins)
  • 1 + 1 tablespoon Cocoa Powder
  • 125 + 125ml Boiling water
  • 100g Dark Brown Chocolate (Finely chopped)

NOTE

Can be frozen at the cake stage -Takes only 20 minutes to defrost.

DIRECTIONS

Chocolate Cake
1.
Preheat the oven to 180C. Grease each mini bundt tin with soft butter, then sprinkle with the spare flour. Empty any excess flour out. 
2.
Using an electric mixer, whisk together the first amounts of sugar and butter until well combined.
3.
Add the eggs while continuing to whisk, then the vanilla, syrup and cocoa. Add the melted chocolate.
4.
Stop the mixer and fold in the flour and water, alternating their addition. I do it in about 4-5 separate intervals.
5.
Spoon the mixture into the bundt moulds and bake for 18 minutes (Less if you are using mini doughnut moulds)
6.
Remove from the oven and allow to cool on a wire rack

7.
Using a medium pan, heat through the remaining water, cocoa & syrup until boiling. Allow to bubble lightly for 4 minutes but do not boil heavily over.
8.
Remove from the heat and add the remaining butter and chocolate – Stir like mad until well combined.
9.
Allow to cool for 2-3 minutes then pour oven the mini bundts
10.
Decorate with mini chocolate eggs or Easter chicks
