Busy family life occasionally leads to no prepared dessert. I know! Bad mother. We always have ice-cream or ‘shock horror’ bought desserts available but there really is nothing like a homemade cheesecake to soothe the soul. We all need some stock recipes that we know will turn out well, are easy to make with enough for leftovers once everyone has eaten. This Lemon & Ginger Cheesecake is just that. Best of all is it a No-Bake Cheesecake too – even the youngest member of the family can help prepare this one.
We like it fairly lemony so use 2 lemons, however if you prefer a more subtle lemon taste, just one will do fine. In fact, if you just want a plain vanilla cheesecake with a ginger biscuit base, then this is the perfect recipe too.
The first thing you might notice about my recipe for this week is that it is ‘No-Bake’. Bit of a dozy moment when blog planning there but hopefully you will agree that the cheesecake is just as appetising as a baked dessert. From time to time, we do get entries that are not bakes but as long as they are tasty, that’s ok with us!
