Halloween White Chocolate & Raisin Bars

Halloween White Chocolate Raisin Bars

This was a really quick recipe and perfect for after school snacks. My girls are full of colds at the moment and feeling a bit sorry for themselves – we are desperate for a break from school madness. An after school easy traybake was just the thing to cheer them up.

I used a very thin covering of white chocolate with Halloween inspired chocolate beans as decoration on the top but honestly, these raisin bars are delicious just plain.

Halloween White Chocolate Traybake

WHITE CHOCOLATE & RAISIN BARS

INGREDIENTS

  • 1.5 cups Plain Flour
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Soft Dark Brown Sugar
  • 1 Medium Egg
  • 4oz Softened Butter
  • 1 teaspoon Vanilla Extract
  • 100 + 50g White Chocolate (Chopped into small chunks)
  • 1 handful Raisins
  • 2 Small Packs of Halloween coloured Chocolate beans

NOTE

These can be frozen – best to do so before adding the chocolate beans. Allow to defrost at room temperature for approx 4 hours.

I used dark soft brown sugar so they are quite dark – light brown soft sugar will obviously make them lighter but still be gorgeous.

I only added a handful of raisins as my girls are not that keen, more raisins or even some hazelnuts taste wonderful.

DIRECTIONS

Traybake
1.
Line a 9″ square cake tin and preheat the oven to 180C
2.
Using an electric whisk, beat together the sugar, butter, egg and vanilla until well combined
3.
Gently fold in the flour, baking powder & salt
4.
Then add 100g of the chopped white chocolate and the raisins
5.
Spread evenly into the cake tin and bake for 20 mins. Leave to cool before cutting
Decoration
6.
Melt the remaining white chocolate by putting in a glass mixing bowl over a pan of simmering water (do not allow the base of the bowl to touch the water) and spread over the top of the traybake
7.
Add the chocolate beans while the white chocolate is still tacky to help them stick
8.
Cut into squares and enjoy!
