Pomegranate Bircher Muesli Recipe (Overnight Oats)

Bircher Muesli, or Overnight Oats as it is also known, is everywhere at the moment – Over the past year, it has become the breakfast of choice, even popping up in all of our favourite coffee shops. As a non-porridge lover, I expected not to like Bircher at first but I really quite like this Bircher Muesli Recipe as it is also made with orange or apple juice, rather than milk. It has a harder texture than porridge and I like how versatile it can be – There are so many combinations of flavours and fruit/nuts that can be added.

Bircher Muesli

Very quick to prepare and full of flavour and texture, this is a great option if you are looking for a fresh, healthy breakfast.

Also very portable, overnight oats can be easily transported, eaten on the move or even at your desk at work.

Are Overnight Oats Actually Healthy?

Yes, depending on what you add to the actual oats. The oats themselves are good for gut health. They can fill you up and slowly release energy, making you less likely to snack on sugary treats in-between your next meal.

Are overnight oats high in sugar?

Oats are a high carbohydrate food, containing higher levels of sugar than other breakfast foods. This may not be an issue unless you are adding extra sugary foods like syrup and maple syrup.

 Ingredients needed for Bircher Muesli Overnight Oats

Oats

Wholemeal Oats are the healthiest, containing more fibre, vitamins, and nutrients.

Liquid: Milk, Yogurt or Juice

Most people go for milk or yogurt but apple juice works equally well. I’m not a huge milk fan so orange and/or apple juice are the perfect additions to overnight oats for me.

Some people even make overnight oats with water, adding flavour through fruit and spices.

Fruit

I personally prefer pomegranate as this will still have a slight crunch by morning. Raspberries add a great tangy taste but will be much softer in your overnight oats.

For this overnight oats apple juice recipe, chopped or grated apple works really well. Make sure to try to keep the apple covered to avoid it going brown.

Nuts

Totally dependent on personal taste – Whole nuts, rather than salted nuts are obviously a healthier choice. Brazil nuts are great, roughly chopped. Pecans and walnuts also go great with oats.

Should I use Porridge Oats or Rolled Oats? Are they the same thing?

Yes, they basically are the same food. Rolled Oats have literally been steamed and rolled so are flatter and will go softer when you have had them soaking overnight. Instant oats can go even softer and may be a little too soggy, according to your taste.

The choice is yours as to how chewy you like your overnight oats.

Do you eat overnight oats cold?

Most people do. If you have added milk, you could pop your bircher muesli into the microwave for 30 seconds to take the chill off.

Equipment

  • 1 Mixing Bowl
  • 3 Ramekins

Ingredients
  

  • 150 Grams Oats·      
  • 1 Medium Apple·    Grated or Chopped Finely
  • 1 1 Pomegranate·      
  • 100 Grams Natural Greek Style Yogurt·       
  • 5 tbsp Orange Juice

Instructions
 

  • In a medium bowl, add all the ingredients and mix well
  • Distribute between the ramekins and cover with cling film or wax covers
  • Place in the fridge overnight
  • Mix well the next morning and eat immediately

    I am not big on muesli and have always tried it when my husband has it in, as it just feels like it is something I should eat. This however, sounds like something I would like to eat and enjoy. Am going to be having a go at making this x

    This does sound a lot better than normal porridge but I’m still generally not a cereal lover. Maybe i’ll need to try it and see x

    Bircher museli is one of my favourite breakfasts for when I want something filling. I haven’t had it with pomegranate before, so that’s a great idea!

    I’ve never heard of it before but I see that it’s quite easy to make and sounds sort of rustic? I like the sound of it anyway and I’m always in the need of some inspiration for breakfast to keep me away from the toast!

    I’m not a huge fan of porridge either, I don’t mind it but it’s not my first choice. I’ve never tried Bircher Muesli, but this does look good
