It may be the season of over indulgence and all things rich, but even the hardest party animal needs some goodness during December. For a lot of athletes, Millie included, training doesn't stop in December or even over Christmas, so they need to keep in top shape. Training can be difficult to fit in around other Christmas celebrations too, so the convenience of a ready supply of energy balls in the fridge is very handy. Plus they keep me away from the Quality Street!
There is no cooking involved and they come together amazingly quickly too - perfect! So much protein comes from the almonds and the chia seeds. And lets not forget the awesome colour from the cherries!
Cherry Bakewell Energy Balls

Ingredients
- 200g Glace Cherries
- 100g Ready to eat Dates
- 150g Flaked Almonds
- 50g Desiccated Coconut
- ½ teaspoon Almond Extract
- 1 tablespoon Chia Seeds

I got about 15 energy balls out of this mixture but that depends on how big you like your balls!
Directions

Using a food processor, add all the ingredients and blitz for 1-2 minutes. I like a bit of crunch so don't process for too long but if you like a really smooth energy ball, blend for slightly longer | |

Scoop out of the food processor & roll into small balls (I go for about double the size of a malteser) | |

Keep in the fridge for at least 15 minutes then eat - Can be kept for 2-3 days |
