Caramac Thumbprint Cookies

I knew it was lethal to go pottering down the chocolate bar aisle. I came across Caramac bars, which I haven’t had for ages. They instantly brought back memories of my teenage years when I spent all the money I made from my Avon round on chocolate. Some things don’t change much!

Thumbprint Cookies are such a cute name – So called because you insert your thumb in the centre to make the indent. What you add to the cookie is totally up to you – I wanted to make some jam ones as my Secret Recipe Club partner for this month has done, but the children persuaded me otherwise. Even dried apricots would work but chocolate of some form was definitely the winner in our house!

We went with a bar of Caramac chopped into small chunks and tiny chocolate chip pieces. The girls had great fun helping me make these cookies – They love dipping their thumbs into flour then into the centre of the cookie, then popping in the chocolate too. Definitely a great recipe for cooking with kids – Even better, these only take 10-12 minutes to cook so perfect for the impatient cooks amongst us.

Total time22 minutes

MiscChild Friendly, Serve Cold
OccasionBirthday Party

INGREDIENTS

  • 180g Soft Butter
  • 1 cup Caster Sugar (I used Golden the second batch I made of these – works well!)
  • 1 Medium Egg
  • 1 teaspoon Vanilla Extract
  • 2 cups Plain Flour
  • 1/2 teaspoon Baking powder

DIRECTIONS

1.
Preheat the oven to 180C and line 2 baking trays with baking parchment
2.
Whisk together the sugar and the butter until fully combined and pale & fluffy
3.
Add the egg and the vanilla and continue to whisk for 1-2 minutes
4.
Fold in the flour and the baking powder and bring together in a ball of dough
5.
Flour the palms of your hands and roll into small balls (about the size of a ferrero rocher)
6.
Place on the baking trays – leave some room in-between as these do spread
7.
Stick your thumb (or that of a child) in some more plain flour and then press into the centre of each cookie. You don’t need to go too deep.
8.
Pop a small piece of Caramac into the centre and bake for 10-12 minutes until just turning golden
9.
Remove from the oven and place on a wire rack to cool
10.
Best eaten on the same day
