I've made 2 lots of cupcakes so far this week with another bake planned for the morning. Nothing too strenuous, Simple Vanilla Cupcakes then these magnificent Chestnut Cupcakes with a totally luxurious White Chocolate Frosting. Yes they really are as decadent as they sound. I was trying to introduce Tara to the joy of Chestnuts but she wasn't up for eating them on their own. She did however adore them as Chestnut Cupcakes and even loved the White Chocolate Frosting.
The ground chestnut add a fabulous texture. Nutty cupcakes that goes perfectly with the smoothness of the rich White Chocolate frosting.
Chestnut Cupcakes

Ingredients
- 125g Caster Sugar
- 100g Softened Butter
- 2 Medium Eggs
- 2 teaspoons Vanilla Extract
- 80ml Milk
- 80g Chestnuts
- 100g Self Raising Flour
Directions
Chestnut Cupcakes | |

Preheat the oven to 180C and line 12 muffin tray with Muffin cases | |

Using an electric Mixer, whisk the sugar and butter together until pale and fluffy | |
3. | |
Add the eggs, one at a time whilst still whisking and make sure fully combined | |

Add the milk whilst still whisking and the vanilla | |
5. | |
Using a food processor, blitz the chestnuts until medium to fine breadcrumb texture. Fold these into the sugar, butter mixture | |

Then fold in the flour. | |

Spoon into the muffin cases and bake for 15 minutes. Reduce the heat to 160C and continue to cook for another 12-14 minutes until golden. |
White Chocolate Frosting
Serves | 12 |

Ingredients
- 100g Good Quality White Chocolate
- 120g Softened Butter (I use spreadable Lurpak as it is really pale and makes the frosting even whiter)
- 250g Icing Sugar (You may need more depending on how firm you like your frosting)
- 50ml Milk
Directions

Break the chocolate into small chunks and melt in a small glass bowl over a pan of boiling water. Do not allow the bottom of the bowl to touch the water as it will burn the chocolate. Allow to cool for 2-3 minutes | |

Whisk together the softened butter and the icing sugar. Add the milk | |

Add more icing sugar if need and spoon into a piping bag |

I'd never have thought of putting chestnuts in cupcakes but I can imagine they give a lovely nutty flavour. All of the Easter themed bakes are making me miss Easter already! It's my favourite time of year for baking x
I think Easter break threw us all a bit Helen lol. I was sure I'm going to have all the time in the world for all sorts of things including blogging but unfortunately it was not the case. Children took over my life and that was that! 🙂
Lovely cupcakes! I still have a pack of vacuum packed chestnuts sitting in the cupboard since Christmas so got perfect excuse to use them now. 🙂 x
