Firstly a huge thank you to everyone for all your kind words following my post last week. We are slightly brighter as time goes on but still missing our little guy SO MUCH! It feels far too long since I caught up with #BakeoftheWeek. I’d like to share with you today, my Speculoos Crumble Cookies. These are made for an extra little snack in the girls’ packed lunches (OH I could go on for so long about how packed lunches take over my life but that’s a post for another day). These have a gently spice taste to them – nowhere near as strong as those little biscuits you get with coffee. Nowhere near as sweet either so I don’t feel too guilty popping them in the lunch boxes. If you want to be extra good, you can leave out the sprinkling of caster sugar on top of the cookies, but quite honestly this is part of their charm.
We’ve been fairly quiet on the #BakeoftheWeek front but never fear, you will hear so much from Jenny & myself over the next week. You seemed to like it when I shared old #BakeoftheWeek entry posts so I’ll do that again over the next week as well as sharing your new entries.
