This cake is so versatile – You can up the amount of coffee and even up the amount of cocoa to make it more of a Mocha cake. Just amend the amount of flour you use – i.e. Use 1 tbsp more cocoa, take 1 tbsp flour out.
Its a really easy to prepare cake – The mixing together should take no more than 10-15 minutes and the decorations can be finished in less than 20. I purposely used 1 packet of White Cooking Chocolate (150g) so you see how far it goes. I use very high quality white cooking chocolate but if you are wanting to get rid of any white chocolate Easter Eggs, use them here.
As usual, I grease the bundt tin with butter then sprinkle flour to give a light coating. I’m sensing my days of being able to do this method in this tin are numbered though. I have a few scratches which are making it harder and harder to get the cake to release. I might have to start lining the base with a thin strip of baking parchment.

INGREDIENTS
- 350g Butter (Plus extra for greasing the tin)
- 350g Dark Brown Soft Sugar
- 6 Medium Eggs
- 1 shot Espresso (Or very strong instant coffee)
- 1 tablespoon Vanilla Extract
- 2 teaspoons Cocoa Powder
- 350g Self Raising Flour
- 150g Good quality white chocolate
- 50g Dark Chocolate
NOTE
The preparation time includes 1 hour cooling of the cake – the rest of the preparation is really quick. This cake can be frozen before the chocolate topping is added.

| Preheat the oven to 170C and grease the bundt tin with butter and a covering of flour | |

| Using an electric mixer, whisk together the butter and sugar until fully combined | |
| 3. | |
| Add the eggs and add gradually to the sugar/butter mix whilst still mixing on a slow speed | |
| 4. | |
| Add the cooled espresso, vanilla & cocoa powder | |
| 5. | |
| Fold in the flour until just combined and pour evenly into the bundt tin | |
| 6. | |
| Bake for 55 minutes until a skewer comes out clean when inserted into the cake | |

| Allow to cool for at least an hour in the tin | |
| White Chocolate Topping | |
| 8. | |
| When the cake is cool, break the white chocolate into small chunks and place in a heat proof bowl over a pan of boiling water. Keep stirring on a low heat until the white chocolate has melted – Do not allow the boiling water to touch the bottom of the bowl | |

| As soon as possible, spread the white chocolate evenly over the cooled cake | |
| 10. | |
| Melt the dark chocolate and pour into a disposable small piping bag – Drizzle over the white chocolate topping | |
