I don’t think you can beat a neat, simple yet bright and striking wedding cake and this Yellow Gerbera wedding Cake is no exception. The simplicity of the actual cake means that most prime colours can be substituted for the yellow such as this Red Gerbera Wedding Cake. But why would you want to though? This yellow is simply stunning.

I love Gerberas as wedding cake ideas. We actually had Gerberas as our button hole flowers at our wedding 20+ years ago but at the time, rustic wedding cakes were not really a thing so we went more traditional.
Sugar Gerberas
These sugar gerberas are completely edible due to containing no wires and made from yellow flower paste – I even managed to find an edible sparkle for the centre and the flowers are stuck together using edible sugar glue.
I used the PMA Gerbera Cutter (Largest cutter out of the set of 3) for the sugar flowers. To make the flowers full bodied, I placed 2 layers on top of each other (separated with a small blob of yellow sugar paste/fondant icing to raise each layer up from each other).
I also cut out a small yellow daisy and stuck this into the middle of the top gerbera.
In the centre of the flower, I used a small flattened blob of fondant icing which had been brushed with sugar glue, then rolled in edible sparkle then attached to the centre of the flower.

Yellow Cake Board
As the bottom cake was a 12″ square, I used a 16″ square cake drum covered with yellow fondant. You need to make sure that the cake board is big enough to hold anything you are displaying on it – like the 2 gerberas the bride requested on this cake.
While the fondant icing was still soft, I pressed the same Gerbera cutter into the fondant to make flower impressions. Take care not to press so hard that the cutter goes right through to the cake board.
You can draw attention to the imprinted flowers by brushing them with an edible shimmer or even painting brush embroidery on them, which I have done here. Sadly, this has not really shown up on the photographs which is a common problem when photographing wedding cakes. I assure you it looked lovely in real life.
I used a plain yellow 25mm ribbon around the base of the board and the same again around the sides of both of the cakes. This really does neaten up the edges of the cake.
Top Cake Tier
This does need to be on a sturdy board as the cake separator is smaller than the cake used here. I didn’t want to use a cake drum as this would make the top tier too tall in comparison to the bottom tier so used a sturdy 8 inch square cake board (not card).

Clear Cake Separator
This Acrylic Clear Cake Separator is one of my most favourite cake purchases. It has come in so handy for all sorts of cakes especially wedding cakes.
The size to chose will depend on the sizes of cakes you are making but this 100m x 100m is pretty typical and a really reasonable price. You just need to make sure it is large enough to put whatever flower or model inside. This should not be a problem for these sugar gerberas but some sugar flower displays may be a bit too tall.
Do I need to use dowels in my wedding cake?
Yes definitely in your bottom tier. You will need at least 4 dowels (I always use plastic dowels or rods) and they will all have to be within the edges of the clear box.
Make sure to also disguise the top of the dowels so they cannot be seen through the base of the clear box. You can do this by brushing a small amount of icing over the top of each one (Make sure it is really flat to the cake).
