1 Soup Maker
1 Hand Blender
1 Large Pan
1 Chopping Board
1 Knife
- 1 Small Onion Chopped finely if you are not using a soup maker - Larger chunks are fine if using a soup maker
- 4 Sweet Potatoes Chopped into even sized chunks
- 100 g Lentils Yellow Split or Red Lentils are fine
- 1 Red chilli Finely chopped - with or without seeds depending on how spicy you like your soup or 1 tsp hot Chilli Powder
- 500 ml Water Add more if you like it thinner
- 2 Veg stock cubes
- 50 ml Double cream Optional
- Black Pepper
Peel and chop the sweet potatoes into small chunks.
Drain and rinse the soaked yellow lentils, or rinse red split lentils well.
Add the onion, sweet potato, lentils, chilli, black pepper and vegetable stock to the soup maker.
Add water up to the correct fill line.
Cook on the smooth soup setting.
Taste, season with more black pepper if needed, and serve hot.
Red split lentils cook more quickly than yellow split lentils, but both work well in this recipe.
If using yellow split lentils, soaking them for a few hours first helps them soften more quickly.
Do not fill your soup maker above the maximum fill line.
This soup thickens as it cools, so add a splash of water or stock when reheating if needed.
