I’m feeling a bit under the weather today – Nothing serious, just an annoying cough and achey. The sort of day that reminds you that you really shouldn’t eat cake for your lunch EVERY day!
Whenever I feel a bit inside out, I always search for the fruit or veg. I’m still not a massive fruit fan but love vegetables.
I also knew that I didn’t have the energy to stand cooking in the kitchen for ages but whatever I had, had to be hugely tasty.
This is one of my most simplest recipes and feels so virtuous. I’m definitely a fan of feeding a cold – I’ve never really got to grips with the starve the fever bit of that saying though!
Obviously whatever veg you have in will do – being ill is all about not having the energy to go shopping, right? I even used frozen salmon and microwaved it – and the world didn’t cave in!
The portions in this recipe serve 2, just in case you have a nurse maid come to visit you. And I know the picture isn’t the best, but quite frankly, it was the best I could do – sorry.
