Ham, Chestnut & Maple Baked Risotto

Ham, Chestnut Maple Risotto Oven Baked

Have you got any leftover Christmas Ham/Gammon? This recipe is one of my all time favourites that will make you wish you had some left. I think I went slightly over the top at Costco this year when I bought our Christmas Ham -It was a real enormous one, the sort that you have to rearrange the shelves and be careful what fresh stuff you buy in December.

Not being a fan of cheese, this is slightly different to traditional risottos in that it is cheese-free – I suppose there is nothing stopping you adding cheese but I really feel it doesn’t need it. There is plenty of sweetness from the chestnuts and the Maple syrup (I used pure Quebec maple syrup that I got from the Canadian Embassy when I visited their Christmas in July Showcase – the proper stuff!)

INGREDIENTS

  • 1 Small Onion (Finely Chopped)
  • 300g Risotto Rice
  • 650ml Vegetable Stock
  • 3 tablespoons Madeira
  • 50g Frozen Peas
  • 2 teaspoons Dried parsley
  • 200g Cooked Gammon or Ham (§)
  • 1 tablespoon Maple Syrup per serving
  • 1 packet Vacuum Packed Chestnuts (Chopped into small chunks)

NOTE

If you are not a fan of Maple syrup, this can be replace by Soy Sauce.

DIRECTIONS

1.
In a large pan, soften the onions in a tbsp of oil (If your plan can double up as being oven proof all the better) Preheat the oven to 180C
2.
Add the risotto rice and a large splash of the stock and stir together.
3.
Add the rest of the stock, chopped ham, chopped chestnuts, peas, parsley and madeira and stir through
4.
Either place a lid on the pan if oven proof, or transfer to an oven proof dish at this point and cover
5.
Bake for 25 – Stirring through around halfway. You may need to add a little longer and about 50ml more stock if the rice is not tender enough for your taste. I added another 10 minutes to this particular dish but don’t always 
6.
Divide into bowls and sprinkle maple syrup on top of each one. Add black pepper to taste – The ham will make this salty so you should not need any more

    We did the same as you on the ham front this year! We actually didn’t have a pot big enough to boil it in so had to cook it as two separate pieces. OOPS! This sounds like a fab way to use it up 🙂

    Also I am pinning that Nut Roast Pie straight away, I wish I had seen that before Christmas it looks divine.

      Oh what a shame – There’s bound to be plenty reduced in the supermarkets though if you fancy having a go. I may even pop there later to see if I can get a bargain x

    Love the idea of making risotto in the oven – it’s such a laborious task of making it on the hob. The chestnuts must have been wonderful in it too.

    I am such a huge fan of risotto! I always make Bacon & Pea Risotto, but will definitely be making this one!

    I always use normal rice instead of Risotto Rice, tastes just as good and so much cheaper.
