I'm well known for my love of The Great British Bake Off. Petit-Fours are often featured, causing consternation about how difficult and delicate they need to be. My recipe for Chocolate, Lime and Raspberry Petit-Fours is so simple that any British Bake Off candidate would be daft not to try them.
I intend on having a selection of Petit Fours available whenever guests come round but somehow it never seems to happen. Chocolate cases with a lime cream and raspberry garnish are the perfect quick make, so pretty and tasty too. I'm sure there's a posher way of explaining it but that's what they are!
The perfect petit-four should be easy to serve and dainty to eat. Ideally they should be able to pop into your mouth in just one (or maximum 2) bites. With these petit fours having a chocolate base, they can be kept in the fridge right up until the last minute with no soggy pastry cases. By making them in a mould, they will always keep a uniform shape and never get too big. If you are making these in winter and want a more seasonal fruit, blackberries provide a wonderful alternative.
How to make Chocolate, Lime & Raspberry Petit Fours
I make a selection of milk chocolate and white chocolate cases which I let set for ½ an hour (I used silicone cases from Lakeland).
I whipped up some double cream (about 200ml) and squeezed the juice of ½ a lime in.
Plonk on a raspberry and flick about some grated lime zest.
Ta-Da! How do they manage to make such a song and dance in that tent? (I'm kidding - Mary Berry would reduce me to pulp)
