Salmon with Herby, Spicy Vegetables

I’m feeling a bit under the weather today – Nothing serious, just an annoying cough and achey. The sort of day that reminds you that you really shouldn’t eat cake for your lunch EVERY day!

Whenever I feel a bit inside out, I always search for the fruit or veg. I’m still not a massive fruit fan but love vegetables.

I also knew that I didn’t have the energy to stand cooking in the kitchen for ages but whatever I had, had to be hugely tasty.

This is one of my most simplest recipes and feels so virtuous. I’m definitely a fan of feeding a cold – I’ve never really got to grips with the starve the fever bit of that saying though!

Obviously whatever veg you have in will do – being ill is all about not having the energy to go shopping, right? I even used frozen salmon and microwaved it – and the world didn’t cave in!

The portions in this recipe serve 2, just in case you have a nurse maid come to visit you. And I know the picture isn’t the best, but quite frankly, it was the best I could do – sorry.

Prep time 5 minutes
Cook time 5 minutes
Total time 10 minutes
Meal type Lunch, Main Dish, Snack
Misc Serve Hot

INGREDIENTS

  • 1 Salmon Filet per person
  • 1/2 Courgette
  • 1 Red Pepper
  • 6 Asparagus Spears
  • 1 tin Chopped Tomatoes
  • 1 teaspoon Mixed Herbs
  • 1 teaspoon Mild Chilli Powder
  • 1 Bay Leaf
  • 2 tablespoons Balsamic Vinegar

DIRECTIONS

1.
Cook the salmon for 3 minutes each in the microwave or according to instructions on the packet – You could steam if you wanted to but this recipe is all about ease and speed.
2.
Chop all the vegetables into 1cm pieces and place in a pan
3.
Add the tomatoes, balsamic vinegar and herbs and cook until soft – you will get a lot of liquid as the vegetables soften so there is no need to add more.
4.
Add salt and pepper to taste and serve with boiled rice. Don’t forget to remove the bay leaf.

    I always think I’m taking the easy option when we have salmon – we always have tons of it in the freezer. I need to expand my fish repertoire a lot! x

    YUM. Now this I can make. I have been feeling so ill lately that fruit and veg are about the only foods that don’t make me sick. This sounds like the perfect comfort food

    We’re a paella catering, however we like the dishes of united kingdom! Without hesitation this one Certainly one of those favourites is! Really like and would really like to learn to generate a inch that is suitable! I am going to decide to check out this recipe!
