This Rainbow Confetti or Funfetti Sprinkle Cake was one of the first cakes I made after coming back to cake decorating. I completely loved the colours and the style and it really got me back into being hooked straightaway.
I didn’t come up with the original design though – My client showed me a tiny photo. The original had My Little Ponies on it too but I love the design without. I have searched high and low to find the original designer but have got nowhere – I would love to tag them and find out if they are a professional cake designer too.
Making this cake got me thinking about how to cover a cake with sprinkles (or Hundreds and Thousands depending on how you say it). I’m never quite sure of the official name for a cake covered in sprinkles – I’ve seen them called Funfetti Cakes or Confetti Cakes and even Sprinkle Cakes.
There’s no doubt about it, its a messy business covering a caw32ke with those pesky creatures – But there are ways to minimise the damage and mess to your kitchen. I will attempt to show you how.
What you need:
- Cake – This needs to have been iced 24 hours ago and allowed to harden. Alternatively, you could use a cake that is covered with marzipan. Read my tutorial on How to Cover a Cake with Marzipan to find out how.
- As I was stacking the Sprinkle cake on top of another cake, I used a thick cake card underneath my sprinkle cake – This also makes the cake easier to handle.
- Greaseproof Paper/Baking parchment/Wax Paper

- Lots of Sprinkles – I use Costco’s own brand of sprinkles but also add more bright colours – I used single packs of red and blue mixed in with the normal sprinkles to make the cake bolder.
TIPS FOR SUCCESS
- Fold the baking parchment up at the sides to make sort of barrier to stop as many sprinkles popping – There is nothing like the noise when you put the cake down on the sprinkles for the first time.
- If you are stacking the sprinkle cake on top of another, make sure the base cake is ready – Dowelled if need be.
- Make sure the surface you are putting your cake on is as dry as possible – You WILL get some sprinkles pinging off into the air!
- Brush any loose sprinkles off with a dry paintbrush.
- If you are struggling to get the bottom edge neat, a ribbon will cover up a multitude of sins.

Amazing cake! Thanks for the tutorial – I’d never have thought to roll it in the sprinkles like that.
I’ve tried pressing the sprinkles on by hand but it is so messy and far too time consuming.

Aah what’s the worst that can happen – you have to clean up a lot of sprinkles but there’s always cake to eat at the end!
