Preheat the oven to 180C and line 2 baking trays with baking parchment
Finely cut the onion and chilli
Saute the onion until soft and starts to turn translucent (About 3-4 minutes). Add the chilli and garlic and continue to cook for a further 1-2 minutes until soft. Leave to cool to room temperature
Remove the skins from the sausage and mash in a bowl
Add the Salt, pepper, lentils and Herbs and then the cooled onion mixture and combine until fully mixed together
Roll out the puff pastry and cut into 2 long strips
Add half of the sausage mixture to each strip of pastry - Easiest to do this by hand. Leave a space either side of the pastry so it can be stuck together
Brush one side of each strip of pastry and fold over the sausage. Press together with a fork
Cut each long sausage roll into 6 equal sized snack sausage rolls
Prick the top of each sausage roll with a fork or knife to let the steam escape
Brush the top of each sausage roll with the rest of the beaten egg mixture and sprinkle sesame seeds on top
Bake for 25-35 minutes until risen and golden
Remove from the oven and allow to cool on a wire rack
