A modern take on a classic cake – the brief was Arum Lilies and Pearls (the couple have a daughter named Pearl!) – Based loosely on a M&S cake that seems to be very popular. All sponge tiers to be eaten on the night.
The pearls were dusted with lustre dust and looked lovely and shimmery – if only every cake was so simple!
The ‘grass’ was made from artificial flower arrangements and therefore inedible.
Does a wedding cake have to have a fruit tier?
Most definitely not. A lot of people still think you have to have the bottom tier to save as a christening cake for your first baby. Considering a lot of married couple already have children, this would be a waste – especially if you don’t like fruit cake. Its certainly not bad luck to have no fruit cake for your wedding cake.
Some people do want a fruit cake but not the bottom tier as only one of the wedding party likes it. Some cake makers insist that this would have to be the bottom tier due to the weight of the fruit cake. If a wedding cake is stacked and dowelled properly, this shouldn’t be an issue and you should be able to have any tier you like as fruit.
