We are deep into camping season around here – We’ve got webbed feet to prove it too! After 9 years of caravanning, we know a thing or two about what works for us, food wise. This summer, we are spending a month (off and on) in the Lake District where we are doing sooo much walking. Camping for us means getting out and about, discovering new places as well as revisiting our old faves. Also, as the children are getting older, we can merrily hike up to 6 miles now as long as there are a few stops along the way.
What we have realised though, is that all 3 children need to know what food will be waiting for them almost as soon as we get back to the van. Even if the price of eating out in the Lakes wasn’t astronomical, we would still be wanting to cook familiar and fresh food for us all. I’ve said it so many times that I believe the key to a happy holiday and well behaved, contented children is in the food that they eat. If they are full of goodness, healthy and tasty meals, they will sleep better, get along better and generally family harmony will be easier to come by. (well, that’s the plan at least!)
One of our favourite ways to cook is individual portions, wrapped in foil cooked on our beloved (if a little weather worn) Cadac BBQ. Even after having our heater for 7 years now, we still haven’t got round to investing in a lid so foil parcels are a god send especially when its raining (Which it does a LOT in the Lakes). I like to prepare the parcels in the morning before we head off for the day, along with any accompaniments that we will be having – CousCous, Salad, Buttery potatoes and even chips picked up from the chippy on the way home, all go well with these Spicy Prawn Parcels.
The beauty of these parcels is that you can serve whatever veg you have with you – We always have loads of peppers but green beans, mange tout, baby sweetcorn and even julienne carrot batons go brilliantly too. Because it is camping, I try to keep spices to a minimum – Who wants to cart round loads of jars of spices on their hols? Slicing the vegetables really thinly and using pre-cooked prawns means that really the parcels only need to be heated for a maximum of 10 minutes – perfect for starving walkers! (PS If it is absolutely chucking it down outside, the parcels can also be cooked in a normal oven for 15 minutes)

INGREDIENTS
- 800g King Prawns
- 1 Green Chilli (Deseeded & Chopped extremely finely)
- 4 tablespoons Soy Sauce (Reduced Salt is fine)
- 1 teaspoon Piri Piri Spice Seasoning (I buy ready made for ease as I’m own my hols)
- 1 Large Red Pepper (Chopped into thin slices)
- 1-2 pinch Black Pepper
- 1 handful Fresh Coriander (Plus extra to garnish)
NOTE
If you like a bit more of a kick, then add another teaspoon of Piri Piri seasoning – We have to be quite conservative as we are serving the children.
DIRECTIONS

| Tear 4 large squares of tinned foil (big enough to be folded at 3 edges and leave steam room once all the ingredients are added) | |

| Add the peppers to the base of the foil | |
| 3. | |
| Mix the prawns and Piri Piri seasoning, chopped chilli, coriander & black pepper in a small bowl making sure they are evenly covered | |
| 4. | |
| Add the seasoned prawns on top of the Red Peppers and pour over the Soy Sauce | |
| 5. | |
| Fold over the top of the foil double and fold in the sides. Keep the foil parcels like a triangle shape so they can sit upright on the BBQ | |
| 6. | |
| Leave in the fridge until ready to cook | |
| 7. | |
| Heat up the BBQ and add the foil parcels – heat for up to 10 minutes or until steaming. Serve immediately | |

I have prawns that I had no clue what to do with and thanks to your recipe I have an idea. Whilst I have never done proper camping before I love the idea of eating a cooked meal together whilst out camping.
Oh now how absolutely delicious does this sound, I love that it can be made on a campfire, just perfect for a weekend away idea with all your friends which isn’t just beans.

I love prawns and this is a brilliant recipe, I can imagine how much flavour there is in those parcels. I haven’t been camping yet but I think I can create this recipe at home as well. I am always looking for new exciting prawn recipes.

Freshly made prawns with a bit of spice must be up there with my favorite food. If they are good prawns with some fresh chilli, cooked in the right way you cant beat it.
