I seem to have been talking to a lot of people at the moment about leaving a legacy to my children when I die – don’t worry, I’m not planning on going anywhere just yet but it is something that crosses my mind from time to time. I’m constantly making notes in various recipe books and when I decide that a particular homemade recipe has become a family heirloom it will get a place in a very special folder. Each of my 3 girls will get a version of ‘the folder’ with our very special recipes in that they can choose to either make, ignore or even pass onto their children. You know the sort of recipe, my fruit cake, my sponge cake recipe, my shepherds pie – the sort of thing that I’d have to kill you if you found out my recipe.
Another one of these recipes is the now infamous Costello Chutney. This was the first attempt I made at making chutney and it was fabulous. I now make it every Christmas for gifts and at least one other time during the year.
A spicy, chunky chutney with a real kick. Perfect with cheeses and hams (and even prawn crackers – try it!)
I am working with Sainsbury’s to promote their ‘By Sainsbury’s’ range as part of their Kitchen Heroes campaign. You have the opportunity to enter one of your signature recipes or family heirlooms – The winning recipe entered into my blog competition will receive a £50 voucher. - You then either leave a blog comment on this post with the URL of your recipe
- Tweet @CasaCostello and @sainsburysPR the link also using the #KitchenHeroes hashtag.
The competition will run until Midnight on Tuesday 14th May 2013.
And so back to the chutney …
Spicy Chutney – Sainsbury’s Kitchen Heroes Competition Win £50 Voucher
- 900 g/2lb Tomatoes
- 1 Green Pepper
- 4 Red Peppers
- 700 g Onions finely chopped
- 4 garlic cloves
- 12 oz Granulated Sugar
- 300 ml White Wine Vinegar
- 1 tbsp salt
- 1 tbsp By Sainsbury's Coriander Seeds finely crushed
- 1 tbsp paprika
- 2 tsp Cayenne Pepper
- 1.Peel the tomatoes – prick them with a sharp knife, place in a bowl and cover with boiling water. Leave for a few seconds then drain and cover with cold water.
- 2.Chop the tomatoes and aubergine and seed and chop the peppers. Put in a large heavy based pan with the onions and garlic and bring to the boil. Cover with a lid, lower the heat and gently simmer for about one hour, stirring occasionally, until tender.
- 3.Tip the sugar, vinegar, salt, coriander, paprika and cayenne into the pan and bring to the boil over a medium heat, stirring until the sugar has dissolved. Continue to boil for 30 minutes until the mixture is chunky chutney and water has evaporated.
- 4.Ladle into sterilised or dishwasher clean jars and top with paper covers. Seal jars whilst still hot and leave to mature for at least a month (I never do!)
