I can almost hear you asking ‘What are NERGI® berries?’ – Well let me tell you before we get on with the recipe – They are a Fruit Berry also known as Baby Kiwis – I think from the photo you can see why.
Ultra cute fruit that are oh so versatile – Perfect for snacking (are you struggling with those packed lunches yet?). You can eat the whole fruit, there is no peeling required so you can just pop them in and munch away.
I was set the challenge to create a recipe using NERGI® berries and thought of my Quinoa pancakes – the easiest way to use the berries is just chop in half and place on top of a pile of pancakes. I went one step further though and actually used NERGI® berries in the pancakes. It has been well documented that my girls are massive pancake lovers so I wondered if the addition of fruit might not be as welcome – I needn’t have worried, they loved them just as much as usual. If anything, the touch of mixed spice went down even better than usual.
The lemon cream is cheesecake based and super sweet to counteract the slight tang from the NERGI®s – If you prefer more of a tang, then a squeeze of lemon juice is great. For added indulgence, a liberal drizzle of runny honey is the ultimate indulgence.
