It’s been a crazy old week here once again – We are just returned from The National Synchronised Age Group Comp in Gloucester. More details about that to follow later in the week but just to say, we deserved a drink after it! (And it was one of celebration not drowning our sorrows!)
Unfortunately, I need to drive early tomorrow so alcohol was off the agenda. As part of my Secret Recipe Club for December, I chose to make a cocktail but quickly had to amend it into a mocktail.
This refreshing Pink Grapefruit Margarita was just the refreshing, cooling drink I craved. You have no idea how hot I’ve been on that viewing balcony since Friday. As luck would have it, I had ordered a Pink Grapefruit and Limes earlier in the week with our home shopping delivery. It was meant to be!
I’ll definitely be trying the alcohol version of this mocktail at some point but for now I present you with BCMom’s Pink Grapefruit Margarita
I was paired up with Anna from BCMom’s Kitchen this month and what a joy it was. There are hundreds of recipes I will be trying on there. She is a baker, a prolific reader and an amazing home cook. I’m looking forward to trying out her Crock Pot Applesauce. Who knows it may even make an appearance on our Christmas Table this year?!
Pink Grapefruit Margarita Mocktail
1 Pink Grapefruit
Crushed Sea Salt
1 Simple Syrup (2 parts sugar, 1 part water) See here for instructions on how to make – Keeps for up to 6 months.
Cut the lime in half and one half into quarters.
Rub one quarter around the rim of the glass and then dip into a saucer of salt.
Squeeze the juice from the grapefruit and rest of the lime into a jug.
Place juice, simple syrup, and ice in blender and blend until well combined. Pour into prepared glass, garnish with lime wedge and a straw, and enjoy.
