It has to be a really tasty soup to get a comment from me. I resisted the joy of a warming bowl of steaming goodness for such a long time – As soon as the weather changes (and hasn’t it just changed?!) out come the soup and their accompaniments. Its all about what a soup is served with that creates a wonderful dish for me!

We chose Mexican Tomato & Fire Roasted Pepper flavour – A fresh Skinnylicious Soup containing less than 2% fat and under 150 calories per portion. We are huge Mexican cuisine fans in our house, even choosing to visit Acapulco for our honeymoon because of the food. I could bring you wistful tales of romantic meals, a perfect location and the holiday of a lifetime. It wouldn’t quite be true though, jet-lag, food poisoning and a hurricane sort of took the shine off the holiday but we enjoyed it nonetheless!
So what did we think of the soup – Really good actually. I’m a bit of a soup snob, I like to think my own homemade soups are wonderful but actually we really enjoyed this flavour. Good consistency for a ‘skinny’ soup and a good depth of flavour.
As we were celebrating all things Mexican we decided against a boring old bread roll and went for toasted tortilla triangles and a veggie salsa.
To make your own salsa, you need: (serves 2)
1/4 Onion, Finely Chopped
2 Large Tomatoes – Chopped into small cubes
A good handful of fresh coriander, chopped
Sprinkling of Ground Black Pepper
