There are times when you need some crunch with your soup. Today was one of those days. Just when we thought the salad was here to stay, the cold weather returned and back out came the soup! Regular readers will know that we are working on a long term project with Glorious Soups, trying out their wide variety of soup flavours.
I actually thought my choice of soup today was from the MEAL soup range. The Goan Tomato & Lentil is a thick, comforting and filling kind of dish. Surprisingly though, it is part of the Skinnylicious range – Low Calorie and only 1.3% fat, aswell as being Gluten Free & One of your 5-a-day.
Going back to the crunch – Homemade Basil Croutons are fantastic. You can bake in the oven if you want to continue the healthy thread – I wanted extreme crunch though, so fried in olive oil.
