My kids have been going wild for these brownies – even before they were in the oven. There’s something about Brownies that makes people go ‘mmmm’.
My partner for this month’s Secret Recipe Club is Rachel from The Avid Appetite. A blog that I completely adore – there are so many clear recipes that I want to try. I knew I’d like Rachel’s blog when I read that she believes no occasion is complete without cake. I’d pretty much say that’s my mantra on life too!
I got inspiration for my Snow Topped Brownies from Rachel’s Simply S’mores Brownies. Basically these are a Brownie Recipes with a whole jar of Marshmallow Fluff spread on top and biscuits sprinkled. Unfortunately we cannot get Graham Crackers readily in the UK so digestives are our next best substitute.
I used Rachel’s Basic Brownies recipe and of course adapted to suit us. It really didn’t need any alterations as it was very alike to our Basic Brownie Recipe anyway.
To make the Basic Brownies into Snow Topped Brownies, I chopped 3 meg marshmallows into 3 and arranged over the top of the cooked brownies as soon as they came out of the oven. I then put them back in the oven for 6-8 minutes until melted and just starting to turn golden.
